This is the pork chop recipe that my grandmother gave me when I got married. After being roasted, pork chops are served with a decadent mushroom sauce. Although it requires some effort, my husband really enjoys it and it’s perfect for a special supper.

Ingredients
- cooking spray
- 2 cups pancake mix
- 1 cup pumpkin puree
- ½ cup fat-free milk
- ½ cup confectioners’ sugar
- 1 teaspoon ground ginger
- ⅓ cup confectioners’ sugar
- 1 tablespoon fat-free milk
Instructions
- Preheat the oven to 450 degrees F (230 degrees C). Grease a muffin tin with cooking spray.
- Combine pancake mix, pumpkin puree, milk, confectioners’ sugar, and ginger in a large bowl. Spoon into the prepared muffin tin.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 12 minutes. Transfer to a wire rack to cool.
- Whisk confectioners’ sugar and milk together until smooth. Drizzle glaze over muffins.
Reviews
Although super easy to make, these muffins were extremely bland. They did in a way taste like pancakes and in the need of syrup or something to balance out the blandness. The glaze did very little to enhance the flavors. I appreciate the ease of making these but the ease does not compensate for the lack of flavor.
