Instant Pot Asian-Style Pulled Pork

Ingredients

  1. 3 ½ pounds boneless pork shoulder, cut into 1 1/2-inch cubes
  2. 1 cup beef broth
  3. 1 cup chopped mushrooms
  4. ½ cup balsamic vinegar
  5. ⅓ cup soy sauce
  6. 2 tablespoons honey
  7. 2 tablespoons minced garlic
  8. 1 tablespoon sesame oil
  9. 1 tablespoon minced ginger
  10. 2 teaspoons red pepper flakes
  11. 1 teaspoon Chinese five-spice powder
  12. 2 ½ tablespoons cornstarch
  13. ⅛ cup cold water
  14. ¼ cup chopped green onions

Instructions

  1. Combine pork, beef broth, mushrooms, balsamic vinegar, soy sauce, honey, garlic, sesame oil, ginger, red pepper, and Chinese five-spice powder in a multi-functional pressure cooker (such as Instant Pot). Close and lock the lid.
  2. Select high pressure according to manufacturer’s instructions; set timer for 35 minutes. Allow 10 to 15 minutes for pressure to build.
  3. Let sit for 15 minutes before releasing pressure using the natural-release method according to manufacturer’s instructions, about 10 minutes. Unlock and remove the lid. Remove the pork using a slotted spoon and place in a separate bowl. Set aside.
  4. Combine cornstarch and water in a small bowl and add to the pressure cooker. Select Saute function. Bring to a boil and cook until sauce has thickened, about 3 minutes. Select Warm function.
  5. Shred the pork using 2 forks to pull apart; mix with sauce. Top with green onions and serve.

Great recipe, just needed longer to cook! I saw someone else’s comment saying they needed to basically triple the cook time. I halved this recipe, so I just doubled the cook time and it was perfect. Just be sure to not add too much extra beef stock. I did by accident. Worked out for me since I put this over Favorite Garlic Noodles, which is a strong pairing, but just be careful! Also, add in some sesame seeds for a little extra sesame flavor if that’s what you enjoy!

Flavor is EXCELLENT and such a nice change from BBQ. Execution …not so much. I made exactly as written and 35 minutes is not nearly enough time. The pork was tough as leather and even bloody in places. I put it in for another 30 minutes and still tough. I am still giving this 4 stars because the flavor is excellent but plan on 90 minutes in the pressure cooker if you want true “pulled pork”.
