Ingredients

  1. ¾ cup milk
  2. ½ cup quick-cooking oatmeal
  3. ½ medium banana, mashed
  4. ¼ cup coconut milk
  5. ¼ cup shredded coconut
  6. 1 teaspoon white sugar, or to taste

Instructions

  1. Combine milk and oats in a microwave-safe bowl. Cook in the microwave until oatmeal starts to bulge at the top and has a smooth, creamy consistency, 1 to 3 minutes.
  2. Mix in banana, coconut milk, and shredded coconut until well combined. Sweeten with sugar to taste.
  3. The cook time in the microwave varies. For newer, more powerful microwaves, it takes usually 1 minute. For lower-watt microwaves, it can take up to 3 minutes.
  4. If oatmeal is too watery after microwaving, cook for a little longer. If it is overdone, you can always add extra milk.

Overall, this is a nice recipe, it’s creamy and good. But, I would change a few things. I used a very ripe banana and didn’t need to add any sugar. I used almond milk instead of dairy, and I used light coconut milk. Next time I would mash the banana first and just cook it with the oatmeal. Also, it only needs 2 T shredded coconut, 1/4 c was a bit much and just added extra calories. It is a good recipe as is, all these changes are just my personal preferences. Thanks for the recipe!
