Pineapple Sorbet

sorbet made of sweet and sour pineapple. ideal for the summer. The pineapple flavor is enhanced by the mint.

Ingredients

  1. 1 pineapple – peeled, cored, and cut into chunks
  2. 1 (6 ounce) can pineapple juice
  3. ¾ cup white sugar
  4. 2 tablespoons lime juice
  5. 1 tablespoon vodka
  6. 2 leaves fresh mint

Instructions

  1. Place pineapple, pineapple juice, sugar, lime juice, vodka, and mint in a food processor and process until smooth.
  2. Pour mixture into an ice cream maker and freeze according to manufacturer’s instructions, about 20 minutes. Transfer to an airtight container; put in the freezer for at least 6 hours before serving so it can firm up.
  3. The vodka helps keep the sorbet soft enough to scoop in the freezer without adding flavor. If you’d like, add a different type of alcohol – experiment with different flavors!
  4. Use an additional tablespoon of lime juice if you like your sorbet a bit more sour.
