Easy, Healthy No-Cook Overnight Oats

All you need is a little sweetness, and vanilla essence gives it a gourmet taste. With this recipe, you may get creative and swap out the bananas for berries, the chia seeds for flax seeds, or the unsweetened nut milk or nut butter of your choice.

Ingredients

  1. 1 banana, sliced
  2. 1 tablespoon unsweetened almond butter, or more to taste
  3. 1 ½ teaspoons chia seeds
  4. 1 cup rolled oats
  5. 1 cup unsweetened almond milk
  6. 1 teaspoon pure maple syrup
  7. ¼ teaspoon vanilla extract

Instructions

  1. Place 3 to 4 slices of banana in the bottom of a jar. Layer 1 1/2 teaspoon of almond butter, 1/2 teaspoon chia seeds, and 1/2 cup oats on top. Repeat layering remaining almond butter, chia seeds, and oats, leaving a 1-inch gap at the top.
  2. Mix almond milk, maple syrup, and vanilla extract in a bowl. Pour over oats, leaving a 1/2-inch gap at the top to allow oats to expands as they soak. Push a knife or fork vertically through the jar to make sure milk mixture soaks all the way through.
  3. Cover jar tightly and refrigerate until oats are moist, 4 hours to overnight.
  4. Substitute any unsweetened nut milk for the almond milk if desired.

Good overnight oats! I don’t see what the benefit of layering the ingredients has on the overall effect—so next time, I would just mix everything all together. The only thing that would make this better for me would be the addition of some yogurt in place of half the milk. Otherwise, it was easy, and very much enjoyed! Thank you for the recipe!

I made it without almond butter, as I didn’t have any and with 2% milk instead of almond milk. It was very good. Next time I may try it with quick oats to allow the milk to absorb more completely.

changed this up to make it healthier and still taste good. Removed the banana as we don’t like them and added Chia seeds around 2 tsp for 2 servings. Do 3/4 C. oats and 1C. of milk, couple drips of vanilla, the Chia seeds, couple tsp. of Cinnamon grounded, handful of blueberries. place lid on shake and put in refrigerator. The blueberries give just eight sweetness, to make it good.

This made an easy, good breakfast. I didn’t use maple syrup but added a little less than 1/4 tsp maple flavoring instead along with some stevia for sweetness. A great breakfast to have in the frig for when I need to get up and out of here on time.
