Ingredients
- 2 tablespoons butter
- 2 leeks (white and pale green parts only), chopped
- salt and ground black pepper to taste
- 2 tablespoons all-purpose flour
- 3 cups half-and-half
- 1 pound potatoes, peeled and chopped
- 1 (8 ounce) bottle clam juice
- 1 pound cooked shrimp
- 2 (8 ounce) bags frozen corn
- 2 tablespoons fresh lemon juice
- 2 tablespoons chopped fresh chives
Instructions
- Melt butter in a Dutch oven over medium heat. Stir leeks into the butter and season with salt and black pepper; cook and stir until the leeks are tender, 4 to 5 minutes.
- Stir flour into the leek mixture until dissolved completely and the mixture begins to thicken; add half-and-half, potatoes, and clam juice. Bring the mixture to a boil, reduce heat to medium-low, and cook at a simmer for 10 minutes.
- Stir shrimp and corn into the potato mixture; continue cooking until the potatoes are completely tender, about 10 minutes more. Remove pot from heat, add lemon juice and chives, and stir.
- For a lighter version, replace half-and-half with skim milk.
- This is also good with shredded cheese on top as a garnish.

This is very good as-is. I like a little spice so added red pepper. Also, substituted scallops for one bag of corn.
Added capers chopped green peppers and a 1/4cup cilantro….and a little bit of Mars alone on top with chives….great tasty chowder.
Very easy to make. I added some chopped up carrots, and a little extra lemon juice. I also added a VERY small pinch of chili flakes for a bit of “zip”.
My husband and I have been looking for an easy and delicious chowder recipe for a while. This one is it! I had a hiccup when I found I didn’t have enough milk but DID have a frozen pint of half & half. No problem! I defrosted it in the simmering leeks and then continued on with the recipe! I also used a cup of almond milk . This will be a staple starter recipe for all kinds of chowders!
I’m like a lot of cooks, change this & that. A great chowed to build on. I left out the veggie but the corn. 2 cups of half /half. I used red potatoes . I cook with white pepper not black. Real chicken stock and freash herbs. What more can I say,. This bowl licking good. A must try at least once. Sorry no picture.
I had to add a lot to give this flavor. I sautéed celery and carrot with the leeks. I wish I had Old Bay, but added Cajun seasoning along with smoked paprika, garlic powder and parsley. I used milk for less fat, added half the clam juice (reserved the other half for later) and threw a couple of bay leaves in while I simmered for thirty minutes or so. I added the corn and a little bit of chopped catfish for more of a fishy flavor and simmered about ten minutes longer before adding the cooked, chopped shrimp. Simmered it down maybe another ten minutes or so before adding the reserved clam juice and lemon juice. Chopped chives for the top. For an extra nutty, cheesy boost, add nutritional yeast! It thickens the broth a bit more and adds another depth of flavor!

This was really good! I decided to make this last minute and did not have any leeks, clam juice, or frozen corn so I added some onion powder, chicken broth and a can of sweet corn in their place. I also added some old bay seasoning for some extra flavor.
Delicious, fast and easy. Next time we will try with milk for a healthier version.

I just finish preparing this dish as is. I accidentally bought frozen sweet corn in a butter sauce. I have to say even with the sweet corn and butter sauce the dish was very tasty.
This was a really good base recipe. It can be tweaked based on what you have on hand. I added in some celery, carrots, and Andouille sausage and a teaspoon of Cajun seasoning. I only used about 5 nice sized potatoes, a pound seemed like a lot, and 1 bag of corn. It was so rich, creamy, and flavorful!
