Strawberry Poppy Seed Cream Cheese Muffins

Ingredients

  1. 2 cups complete honey wheat pancake mix
  2. ¾ cup Almond Breeze Vanilla or Vanilla Cashew blend Almondmilk
  3. ⅔ cup sugar
  4. ⅓ cup vegetable oil
  5. 1 teaspoon vanilla extract
  6. 1 teaspoon poppy seeds
  7. ¾ cup coarsely chopped strawberries
  8. ⅓ cup strawberry jam
  9. ½ (8 ounce) package 1/3 less fat cream cheese, cut into 1/2-inch pieces

Instructions

  1. Preheat oven to 375 degrees F and line 12 muffin cups with paper liners.
  2. Stir together pancake mix, Almond Breeze, sugar, oil, extract, and poppy seeds in a medium bowl. Lightly stir in strawberries and cream cheese. Add strawberry jam and swirl lightly with a knife.
  3. Spoon into prepared cups and bake for 20 to 25 minutes or until a toothpick inserted into the center comes out clean.
  4. You can substitute almond extract for the vanilla extract if desired.

I made one change to the recipe, I used plan pancake mix. Love this Receipe and I have made it several times . Yummy

Tastes very good. Next time I will cut the cream cheese smaller. But other than that it was very tasty.

I should really give these 5 stars – they were so good! However, I made a couple changes. I had buttermilk complete pancake mix already on hand, and used 1/2 cup coconut flour (and about 2 Tbsp water) and 1-1/2 cups pancake mix. . Only other change was to omit the strawberry jam – no need for it! Will make again.
