Mexican Egg Rolls

  4.4 – 77 reviews  • Egg Roll Recipes

This chicken meal is simple, tasty, aromatic, and moist thanks to the white wine, artichokes, and mushrooms. Delicious when accompanied by buttery noodles and crisp greens.

Prep Time: 15 mins
Cook Time: 15 mins
Total Time: 30 mins
Servings: 14
Yield: 14 rolls

Ingredients

  1. 1 (14 ounce) package egg roll wrappers
  2. 1 pound lean ground beef
  3. 1 (1.25 ounce) package taco seasoning mix
  4. 1 (4 ounce) can diced green chilies, drained
  5. 2 cups shredded pepper Jack cheese
  6. 4 cups oil for frying, or as needed

Instructions

  1. Crumble ground beef into a large skillet over medium-high heat. Cook until evenly browned, then drain off grease. Add taco seasoning and cook according to package directions. Set aside.
  2. Heat 1-inch-deep oil in a large skillet or preheat a deep fryer to 375 degrees F (190 degrees C).
  3. Lay out one egg roll wrapper at a time. Place a rounded tablespoon of seasoned ground beef in the center. Top with a small spoonful of green chilies and a little bit of shredded cheese. Roll up according to package instructions, and seal edges, wetting with water if necessary. Repeat with remaining wrappers and filling.
  4. Fry rolls in hot oil until golden brown on all sides, about 5 minutes. Remove from oil to drain on paper towels. Serve hot and fresh.

Yummy made them many of times

This recipe was good and easy enough. I mixed everything together instead of layering and I baked at 400° for 30 minutes instead of frying.

Delicious! I just used the idea in general. I filled them with ground beef and taco seasoning. Made some with corn and black beans and cheese, others with just beef and cheese. I baked them but sprayed the cookie sheet first then sprayed the egg rolls with cooking spray and they got nice and crispy. Very good dipped in sour cream, salsa or nacho cheese. A family (kid) pleaser for sure! Would be good with chicken too.

Yum. Everyone loved them. I threw in the green chiles when the meat was cooking. Big hit! Put an egg roll wrapper in the oil to check the temperature before I started frying them to make sure the oil was adequate. Thank god for Pepcid!

This was excellent! Stuck to the recipe 100% and couldn’t be more pleased. Even my picky 4 year old wanted more. These would be easy to adjust based on taste and personal preferences and could be really fun to modify in the future.

I baked them in the oven 425 for about 30 min. They turned out AWESOME!!!

Quick and easy.

Love this for NYEve – rarely fry and always do it outside so it has to be an occasion! Add black beans, corn – make my own taco seasoning as the packaged mix is way too salty. Like a ranch chipotle dip with these!

These were really simple to make and very tasty. I used shredded chicken and black beans in mine. They were delicious and fried up in about 2 min. each pan. They do tend to get a little soggy so eat them right away!

These were great! Followed the recipe exactly. Whoever said these weren’t good for you, really? lol! allrecipes is the name of this website, not healthyrecipes.

Quite tasty, especially when prepared with the most popular taco seasoning recipe on this site! Those who have Celiac Disease or are gluten-intolerant can substitute rice paper for the egg roll wrappers- they won’t brown up like traditional eggrolls, but they will get quite crispy.

The recipe was easy and quick. The end result was very tasty with a litle salsa and sour cream. We made them for a snack and they were a hit.

This was a hit. I was surprised they were so tasty and easy to make. I will add some cilantro and maybe black beans to it next time.

I make these for my kids all of the time. I am also making these for a cinco de mayo shower.

awesome. I put green and red pepper and onion in my turkey ground meat and some low fat mexican shredded cheese. Plus some refied beans. We ate them with guacamole, sour cream, salsa, corn bread, tostito chips and mexican rice. SO SO SO GOOD!

I made this recepie and added a few extra items to add more flavor. I baked these as I did not want to fry my food. I thought it was just okay and I would not make again.

These are great but only if you add more stuff, salsa or rotelle tomatoes is /are a must, black beans and corn are also good but not a must. Less taco seasoning and more salsa, onions, garlic and cilantro. I baked them 400 20 minutes turning every 7 min or so. Served with salsa/sourcream/guacamoli, excellent!!

Good but a little bland. I added some roma tomatoes diced and a little extra cheese and it turned out very good. I also baked with a little drizzle of oil instead of frying for a healthier alternative.
Ashley Oliver
Baked instead of fried. It was still good. Probably would have been even better with some black beans.

These were good not fantastic. And they were only good after adding, corn, salsa and black beans.

These were yummy! Whole family enjoyed them, although I made them with just hamburger and cheese for the kids and the remainder of the goods for us adults. Make sure to not overcook and drain well or will be GREASY.
