Baked Lemon-Butter Salmon

Salmon fillets with lemon butter are simple and tasty. In order to feed a large party or family, I duplicated and modified an ancient recipe.

Ingredients

  1. vegetable oil cooking spray
  2. 8 (4 ounce) skinless salmon fillets
  3. 4 tablespoons salted butter
  4. 2 ½ tablespoons fresh lemon juice
  5. salt and ground black pepper to taste

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C). Spray a baking dish with cooking spray and place salmon fillets in the dish.
  2. Place butter in a microwave-safe bowl and microwave on high in 30-second increments until melted, 30 seconds to 1 minute.
  3. Mix lemon juice, salt, and pepper into the melted butter; pour over the salmon.
  4. Bake in the preheated oven until fish flakes easily with a fork, 12 to 18 minutes.
  5. I use wild salmon fillets that are approximately 1/2-inch thick. You can use one large 2-pound salmon fillet cut into eight individual pieces if preferred.

This was pretty good, given the minimal ingredients. I used 1 1/4″ thick center cut salmon and it was more than done at 12 minutes. If using thin pieces (like the 1/2″ filets the recipe creator uses), then I suggest you start checking before 12 minutes in order not to have dry, overcooked salmon. I would have liked a bit more depth of flavor, but given the easy and simplicity of the dish, it made for a quick weeknight dinner.
