Chocolate Gooey Butter Cake

My version of St. Louis gooey butter cake with chocolate. If desired, sprinkle powdered sugar on top.

Ingredients

  1. 15 ¼ ounces chocolate fudge cake mix (such as Betty Crocker®)
  2. ½ cup salted butter, melted
  3. 4 eggs, divided
  4. 1 teaspoon vanilla extract (Optional)
  5. 1 (8 ounce) package cream cheese, softened
  6. 5 tablespoons cocoa powder
  7. 4 cups powdered sugar

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9×13-inch baking pan.
  2. Mix cake mix, butter, 2 eggs, and vanilla extract in a bowl. Pat into the prepared pan.
  3. Mix cream cheese, cocoa powder, and remaining eggs together in another bowl with an electric mixer. Beat in powdered sugar slowly. Pour over cake layer in the pan.
  4. Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 45 minutes. Let cool.
  5. You can use any chocolate cake mix.

Looks delicious and I’ve had butter cakes and love it when cooked right, but never had chocolate butter cake. Wanting to add something different to my menu.

Delicious! I only had a yellow cake mix on hand, so to that I added a little more than 1/4 C cocoa powder, 3 tbs sugar (to offset the bitterness), and 3 tbs of milk. The rest of the recipe, I kept the same. Wow, it turned out great! I will definitely make this again.

8.14.20 I’ve never had St. Louis gooey butter cake, but if it tastes anything like this, I know I’d love it. I don’t use cake mixes often, but the simplicity and few ingredients of this recipe are what sent me to the kitchen. In a word, we thought this was AWESOME! I scaled the recipe in half, weighed the cake mix, and obviously, baked in a much smaller dish. I’m glad that I have enough for a second cake, because I feel certain that’ll happen pretty soon. “Gooey” is a pretty good word to describe the texture which is somewhat similar to a brownie except much softer, and chewy would be another word. Follow the directions, and don’t overbake. The chocolate flavor is bold, and yes, it is very rich (smaller servings in this house). Thanks for sharing, two thumbs up from the two of us.
