In this hearty casserole, leftover chicken, yellow squash, onions, and a delectable cheese sauce are all blended. Although my kid doesn’t particularly like squash, he was intrigued by the flavors of the well-seasoned sauce and ended up enjoying his meal. Your menu will be finished with some crusty bread and a salad.

Ingredients

  1. 4 cups all-purpose flour
  2. ¾ teaspoon baking powder
  3. ½ teaspoon baking soda
  4. ½ teaspoon salt
  5. 1 ¼ cups white sugar
  6. 1 cup butter-flavored shortening
  7. ¼ cup corn syrup
  8. 2 eggs
  9. 1 tablespoon vanilla extract
  10. 1 cup pecans
  11. 1 cup chocolate chips

Instructions

  1. Mix flour, baking powder, baking soda, and salt in a bowl. Whisk sugar, shortening, corn syrup, eggs, and vanilla extract in a separate bowl. Stir sugar mixture into flour mixture until just combined. Refrigerate dough until chilled, 30 minutes to 1 hour.
  2. Preheat oven to 350 degrees F (175 degrees C).
  3. Scoop cookie dough using a cookie scoop or 1 tablespoon so all the cookies are uniform; shape dough into teardrop-shaped cookies. Flatten the pointed side of each cookie to form the ‘face’. Arrange cookies on baking sheets.
  4. Bake in the preheated oven until golden, 10 to 12 minutes. Cool on the baking sheets for 10 minutes before removing to cool completely on a wire rack.
  5. Pulse pecans in a food processor until finely chopped; transfer to a bowl.
  6. Melt chocolate chips in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching.
  7. Dip the top of each cookie in the melted chocolate, spreading to fully coat the ‘body’ of each hedgehog. Press cookies, chocolate-side down, into the ground pecans forming the ‘fur’. Arrange cookies on a sheet of waxed paper to set, about 30 minutes.
  8. Transfer the remaining melted chocolate to a piping bag or plastic bag with a corner snipped. Pipe chocolate onto the pointed end of each cookie for eyes and a nose.
  9. Pecans give the best coating because of the color variation. For a nut allergy, a mix of graham cracker crumbs and one or two chocolate wafer cookie crumbs (remove the cream filling) will give a close look.

The idea is very cute, my hedge hogs turned out alright and I will keep this recipe in mind. However, I had 3 grievances : (1) Very labor- and time-intensive (maybe I should have bought cookie dough). (2) My dough was very dry and crumbly which rattled me a bit. I didn’t change anything with the recipe and I think it was alright. (3) I had to bake for double the time as the hedgehogs were noticeably raw after 12 minutes. Maybe I made them too big? The taste was OK. Anyway, cute idea and I’m glad I tried it for a visit to friends with little children.

Super cute and were a hit, with a few adjustments… 1) they were VERY dry, I ended up adding milk so I could finish mixing the dry and wet ingredients. They turned out quite dry as well, so I’d recommend using another sugar cookie recipe and molding them into the hedgehogs. I also added lemon juice for some extra zing. 2) I shaped them like chocolate hedgehogs, not like in the video. They were almost spherical With a sharp point. 3) bc of this, I baked them at a lower temperature for longer, around 300degrees for 15-18min.

I added a bit of extra honey, shortening, extra flour, milk to make the dough. The original dough was so crumbly it wouldn’t ball up hence the extras. I had to experiment to get it to work but they turned out great.

Very Happy with the results of this cookie. used margarine quarters rather than shortening. concerned that 1tbsp of real vanilla would be too strong so only used 1tsp. Good flavored cookie. Dough worked very well into balls and then teardrop shape. Didnt flatten the nose. one small tbsp is more than enough dough for each cookie – they grow when cooked. used olive oil to thin chocolate as suggested by other reviews. Used roasted almonds rather than pecans. so cute!
