This recipe was given to me by my grandmother. This meal is beloved even by those who don’t care for cabbage.

Ingredients
- 5 large tomatoes
- 1 small red onion, thinly sliced
- sea salt to taste
- 1 ½ teaspoons dried oregano
- 1 small green bell pepper, sliced (Optional)
- ½ medium cucumber, sliced (Optional)
- ¼ cup Greek black olives
- 3 tablespoons extra-virgin olive oil
- 1 (8 ounce) package feta cheese
Instructions
- Cut tomatoes into wedges over a large serving bowl so that any extra juices land in the bowl with tomato wedges. Add onion slices and oregano, then season liberally with salt; mix to combine. Allow tomatoes to sit at room temperature until juices have released, at least 20 to 30 minutes or up to 2 hours.
- Mix in bell pepper, cucumber, and olives just before serving. Top with feta cheese and drizzle with olive oil.
- Don’t skip the salting and resting step! The tomatoes’ acidic juices combine with the olive oil to make the perfect dressing, with no need to add vinegar or lemon juice at the end. To encourage the juices to release, give the tomatoes an occasional stir while resting.

Good recipe, but I wish recipes like this included weights. Example: How much do 5 large tomatoes weigh? Websites seem to indicate a large tomato is 10 ounces, so I used 50 ounces of smaller tomatoes. Wow, I can feed a small army with how much this makes. Should that have read “5 large Roma tomatoes”? Having weights listed would really help. Also, 1/2 medium cucumber seems really light for a salad like this.
I used one large tomato and there was close to four servings. Ican’t imagine how much salad you’d get with five large tomatoes.

This was so tasty and an excellent way to use up garden tomatoes and cucumbers. Adding olives as noted in the recipe added a great taste, and the feta cheese also added a unique flavor. I made this several times during the summer growing season.

I followed this recipe to a T! It is amazing! While I didn’t- will do next time! Have some bread on hand to dip (naan, French, breadsticks- whatever!). I loved every bite and since it makes a lot (for 2) I am hoping it stands well overnight for me to polish off tomorrow! My only change! I happened to have some fancy garlic infused olive oil I received as a gift – which I used. While I don’t think that is required – I loved the touch of flavor it added. Kudos to an awesome recipe!!
This is such a delicious summer salad! It is light, but very flavorful. We used tomatoes, bell peppers, and cucumbers from our garden which give it the best flavor. We serve it alongside a grilled steak or chicken and it compliments the meat very well. It makes quite a large amount, so with the leftover amount I added bowtie pasta and chicken to make a pasta salad…it is amazing!
This was a great way to use produce from my garden. We both loved the way it tasted, and I particularly liked that it so easy to prepare. I was a little hesitant about “liberably” salting the tomatoes, as we are both on low sodium diets. But I took the leap and this recipe is one that definitely requires salting the tomatoes. I did add a splash of balsamic vinegar to my bowl, and that just took it over the top for me. Thanks for sharing this delicious recipe.
So great with my garden fresh vegetables this time of the year! Next time I’ll use a little less feta I also used a dollop of tzatziki! Love this summer side dish!
We eat this all the time. Have for years. It’s cool and refreshing whether with meat fish or poultry. Or all by itself! Just love it! Definitely wait to add the feta right before you’re going to eat it. If up to me would be served every night. I love salads with feta or blue cheese. The more vegetables the better here. However I have a hubby who just has to have some type of bread and starch every time he eats omg. Kills me people. I can do without all that and he just thinks he’ll starve without it ?? 7.16.21 I just eyeballed measurements, and this turned out fabulous. The salt is really important, so would recommend you not omit it. Forget about the lettuce, you don’t need it, as this REALLY is The Greek Salad! Simply delicious salad, one that I’ll be making often.
I was skeptical, but waiting for the juice of the tomatoes was well worth it. The olive oil mixed with the juices to create a great dressing. Will make again and again.

This is so easy to make and it is out of this world delicious! I made souvlaki and needed a salad. It’s fresh and tasty! I will make it again when we have a Greek meal.
I really enjoyed this, especially since it wasn’t “lemoned” to death!!! Even the cucumber (not exactly a fan) tasted wonderful!!! One hint though, which my daughter told me about! I’m having motor difficulties with my hands, so she suggested I use my potato peeler to slice purple onions with!!! It gives me SO much more control!!! Also, I made the tomato chunks smaller, since most salad offerings are cut too large for some folks! I used an heirloom tomato I have been saving, and it was the best “Greek Salad” I’ve ever experienced! Thank you for sharing!!!

I lived in Greece for 2years and YES!! this is the real thing !! When I got home everyone kept presenting a bowl full of lettuce with the other veggies and calling it a “Greek Salad” and I would say no it’s not. But thank you for putting it on line for the rest to see.
