Ingredients
- 1/2 cup butter
- 1/2 cup unsweetened applesauce
- 3 large eggs
- 2 cups all-purpose flour
- 1 cup packed brown sugar
- 2 teaspoons ground cinnamon
- 2 teaspoons vanilla extract
- 1 teaspoon baking powder
- 3/4 teaspoon baking soda
- 3/4 teaspoon salt
- 3 cups diced apple (about 2 medium apples)
Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Lightly grease and flour a 9×13-inch baking pan.
- Beat butter, applesauce, and eggs together in a large bowl with an electric mixer until foamy. Add flour, brown sugar, cinnamon, vanilla, baking powder, baking soda, and salt; mix until well combined. Stir in apples. Pour batter into the prepared pan.
- Bake in the preheated oven until a toothpick inserted into the center of cake comes out clean, 25 to 30 minutes. Cool in the pan for 10 minutes.
- I like to leave the peels on the apples for this cake but you can peel them if you prefer.
- This recipe was tested in our test kitchen and updated to replace 1 cup vegetable oil with 1/2 cup melted butter and 1/2 cup unsweetened applesauce.

This may not be the prettiest cake you’ve ever made, but it’ll rank right up there with one of the tastiest. I wanted to reduce the amount of sugar, so I used Splenda® Sugar Blend which worked out fine. Scaled this in half, used Granny Smith apples, baked in an 8×8 dish, cooked for 35 minutes, and cut into 9 servings. After mixing the apples into the thick batter, I was concerned that there were too many, but those diced apples are what make this so delicious. Each serving is packed with sweet apples in every bite, it’s really light and moist, and a sprinkle of some confectioners sugar styles it up a bit. This one’s simple to make and a keeper!
Very good cake. The amount of apples is what makes this cake so moist. The center was soft and tender while the top was crunchy. Sprinkled with powdered sugar for visual effects but it is not needed. Will make again. Thanks for sharing.
Such a delicious cake! I cut the recipe in half and used Honeycrisp apples. I cooked it in an 8×8 pan. It is a very dense cake overflowing with apples. The inside is tender but the outside is crunchy.
I loved this cake. It’s a little dense but might be because I didn’t beat eggs and oil well enough, not sure. But still really good. It’s a sweet cake, so be aware of that. Mine came out with this crunchy top that was unexpected. The apples are tender crisp. I used Granny Smiths. The batter is more like a dough and does not “pour” into pan. It’s such an easy cake to make, and a one bowl one at that. I’ll definitely make this again.

Added extra cinnamon, cloves, cardamom, and nutmeg to make it spicier and warmer. Yum!

Great, moist cake! Had a ton of apples that needed using and this took care of all but one of them. Made some changes according the previous comments. Subbed oil for 1/2C of melted butter, when batter was too dry I added buttermilk until it was more of a thick cake batter texture. Also halved the sugar as the apples were very sweet and that was definitely a good call, tasted great and would have been too sweet I think otherwise. I also added some spices in addition to the cinnamon. I added a tsp of ginger, tsp of cardamom, and 1/2 tsp of nutmeg. It was so easy to throw together and was so good. Next time I might try a streusel topping or something like that for a bit of crunch
It was absolutley delicious! We loved it! I only had a 9×9 cast iron skillet so I had to cook it for 75 min. It tasted like a delicious bread pudding with a crispy carmelized top! Wow! My hubby can’t wait for me to make it again!
The batter was very thick, I was concerned about that. I did what others suggested, an extra apple, mixed the apples with sugar snd cinnamon and also did two layers of apples. I drizzled the cooled cake with a powdered sugar glaze. The cake came out so beautiful! My house smells great
Updating my review. Unlike some cakes, this cake is VERY sensitive to the pan you bake it in. If you use a 9 inch round cake pan instead of the pan they suggest be prepared to bake it almost another 45 minutes for the knife to come out clean. Otherwise you will have glop on the plate instead of cake.

Nice & easy recipe. I’ve made it a couple times now with the following adjustments: Halved recipe & put in 8×8 pan, topped it with a combination of crushed walnuts, cinnamon & sugar.
Delicious! I added an apple glaze on top for an extra bit of sweetness. Mix 1 cup of confectioners sugar with 3 tablespoons of apple cider and brush onto the cake once it’s cooled.
It was great! Easy to make and tasty. I pretty much followed the original recipe. I did add a little nutmeg. 1 tablespoon of vanilla and about 1/4 cup of milk. I was pleased with how it turned out. The next time I will cut back the oil to 1/2 cup and use 1/2 cup of milk. I will also try brown sugar. Great with a cup of coffee in the morning or with Ice Cream at night.
We followed directions exactly and it turned in to pizza like dough. We added 1 cup of milk and we will see what happens.
Bundt pan will ensure it cooks in the dense middle. Used 3/4 cup greek yogurt and 1/4 cup oil. Added another tsp of cinnamon, a tsp of nutmeg, a 1/2 tsp of ginger, and 1/4 tsp cardamom. Used cake flour instead of AP. The prepped apples had a little lemon juice and 1/2cup brown sugar already- the juice helped thin the batter a little. Only added 1 cup white sugar. Nice cake! Would make again!
