Ingredients

- 2 eggs
- ⅓ cup hickory-flavored barbecue sauce
- 2 cloves garlic, minced, or to taste
- 2 chipotle chiles in adobo sauce, minced, or to taste
- 2 tablespoons adobo sauce from chipotle peppers
- 1 teaspoon kosher salt
- 1 teaspoon coarse ground black pepper
- ½ teaspoon celery salt
- ½ teaspoon ground cumin
- 1 tablespoon Worcestershire sauce
- 1 onion, chopped
- ½ cup dry oatmeal
- 2 pounds lean ground beef
- 2 tablespoons hickory-flavored barbecue sauce
Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Spray a 9×5-inch loaf pan with cooking spray.
- Whisk eggs in a large mixing bowl until smooth. Whisk in 1/3 cup barbecue sauce, garlic, chipotle chiles, adobo sauce, kosher salt, black pepper, celery salt, cumin, and Worcestershire sauce until evenly smooth. Mix in onion, oatmeal, and ground beef with your hands until evenly blended. Pack mixture into the prepared pan. Brush the top with 2 tablespoons barbecue sauce.
- Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
- Everyone’s tolerance for spice varies, so feel free to change it up. I like medium spice, but my husband prefers milder. Both of us were happy with three seeded chiles; it was not too hot, but it had a great smoky flavor. If you want more heat, you can increase the number of chiles, or don’t remove the seeds.
- For sandwiches the next day, heat slices of meatloaf on a griddle or in a frying pan to crisp them up. Add additional barbecue sauce. Serve on heated sandwich rolls (onion is great) with Swiss cheese. If you prefer cold sandwiches, try a simple chipotle-mayo dressing.

Making the recipe again! I use ground turkey for my meat choice. I also line my cooking sheet with parchment paper and mold a loaf. The meat doesn’t stew and you get 3 sides crisped.
I left out the Chipotle peppers. Added 1/2 cup of chopped red peppers and 1 tsp. of Mesquite powder. Used Sweet Baby Rays BBQ sauce. Best I’ve ever had, had to save the recipe.
This recipe was INCREDIBLE! I followed exact recipe but was sure to split the chipotle peppers and de-seed them before chopping and putting them in meat mixture. The seeds hold more heat. Smokey, flavorful, with a small hint of kick. Savory and very slightly sweet (and I hate sweet food). Note…the added adobo sauce is key, so do not skimp. Also, separate leftover chipotles and place one or two with some sauce in each plastic snak sized bag…then label and freeze…freezes well and great to grab to flavor chili’s burgers, tacos, enchiladas, soups!
I only used 1 lb of ground beef so had to adapt. It was very flavorful but didn’t hold together like meat loaf should. My mistake. Served with baked potato and sweet potato along with steamed broccoli. Very good.

This is a family favorite. My mother, who says she doesn’t like meatloaf, asked me to make this again! I use half ground turkey, but otherwise follow the recipe.
So good! I took it out of the loaf pan after an hour and put it back in the oven to crisp up a little. It wasn’t too spicy at all. I will definitely make it again.

This recipe gets ten stars from us. I cut the recipe in half, and overcooked it. The thermometer read 188 degrees, and the meatloaf was still moist, flavorful, ultra spicy and delicious. Just had another slice for dessert. Thank you Jean for a great recipe that takes very little time for prep.
This is Great I made a paste of chipotle adobe peppers and ketchup put on top after it’s done. Depending on heat desired you can use more or less chipotle peppers.
I dropped out some of the spicier spices and used a hickory and brown sugar bbq sauce. The texture was a bit too wet for my liking, but the flavour was fantastic!
I made this and let it cook all day in the crockpot. When I came home to make the side dishes, my family had already made a side dish and fresh salad. I had the two ends of meatloaf – becaust that was all that was left. Best recipe EVER!
It turned out well. I added a bit more adobe sauce and mixed it well. Also mixed a tablespoon of adobe sauce into the BBQ sauce topping. I put the meatloaf into three small foil loaf pans. One of which I baked, the others are frozen.
I enjoyed this recipe a lot, but definitely didn’t come out stiff enough for sandwiches. I suspect the bbq sauce may not have been as thick as some other brands and was suspect of only 1/2c of oatmeal. I will increase this next time for a stiffer meatloaf.
I made it with chipotle powder and added some red bell peppers. Very nice flavor. Will make again and try to have the chipotle peppers on hand.
Honestly probably the best meatloaf I’ve ever made. I was super happy and my wife and kids ate it and loved it.
Delicious! My only changes were using store bought Pico (1 c) in place of onion, replace oatmeal with 1 c corn chips and 1/2 c milk. Loved it, not to spicy!
I love it! I did make a few changes such as adding a couple stalks of celery (instead of the celery salt) and some carrots while cutting the onion to half. I also like my meatloaf a bit moist so added unsweetened unflavored almond milk to give it that oomph! Also, to cut the sugar (since most hickory BBQ’s have at least 15g of sugar per two tablespoons!) I used a regular 4g of sugar for the loaf and added the hickory BBQ to glaze. I think next time I will do 3 peppers instead of 4 but overall it came out delicious!
