Ingredients
- 4 skinless, boneless chicken breast halves
- salt and pepper to taste
- Creole-style seasoning to taste
- 1 (14.5 ounce) can stewed tomatoes, with liquid
- 1 stalk celery, diced
- 1 green bell pepper, diced
- 3 cloves garlic, minced
- 1 onion, diced
- 1 (4 ounce) can mushrooms, drained
- 1 fresh jalapeño pepper, seeded and chopped
Instructions
- Place chicken breasts in a slow cooker. Season with salt, pepper, and Creole-style seasoning to taste. Stir in tomatoes with liquid, celery, bell pepper, garlic, onion, mushrooms, and jalapeño pepper.
- Cook on Low for 10 to 12 hours, or on High for 5 to 6 hours.

One of my absolute favorite recipes ever! I start to crave this when I haven’t made it in a while. It is very filling and this recipe yields a lot of food so be prepared for leftovers unless you’re bringing it to a gathering of some sort. You can make this as hot or as mild as you want. I tweak it just a little: I omit the mushrooms because my boyfriend doesn’t eat them and I must say, I like this better without them myself. I use 5-6 chicken breasts, stoplight peppers instead of the 1 green one, 1 can of Rotel and 3 jalapeno peppers along with everything else listed. I’ve also made this without the garlic simply b/c I didn’t have it at the time and I couldn’t tell the difference. Then, at the last half hour this is in the slow cooker, I throw 2 small cans of Mexicorn into the mix. I make white rice and put this divine dish on top and everyone devours it!

My family and I loved it. I did tweak it as all cooks do. I omitted the mushrooms and jalapeño as some others recommended because it was not creole. I increased the bell pepper and celery. Also added sausage. Next time I may add the mushrooms back in because I love them. I think it will still be delicious.
After making this dish EXACTLY as written, in my humble opinion, it was definitely NOT a dish I would serve to guests! Nothing more than chicken in tomato sauce – no one asked for seconds and two said they were headed to Popeye’s for fried chicken . Everyone asked why there were mushrooms and jalepenos in a Creole dish – I could not give an adequate answer. Would NOT make again! Funny that a critical review requires a “review” prior to posting. Will quit using this website!

I used the suggestions made by YatCajun and it was awesome. I was a little heavy-handed on the cajun spices, so it was spicier than I would have liked. I calmed it by adding sour cream and it was great. I will go light on the cajun spices next time. Thanks YatCajun!
First, I am not trying to be overly critical. So I apologize from the get-go. It was OK, but it lacked flavor. Having worked as a line cook in a very famous restaurant in NOLA, I can’t understand why anyone would use canned vegetables when you ar going to slow cook this for probably about 6 hours. There is an old saying, “if it is worth doing at all, it is worth doing it right” First off mushrooms are not part of Creole cooking, especial mushrooms that have spent a year soaking in a can of water! The Trinity of fresh onions, fresh celery, fresh bell peppers , added with fresh jalapeno peppers is what puts the life in the food. Even the spices you use need to be fresh, not what has been sitting in the pantry for the last 3 or 4 years. I’m glad you didn’t go to Walmart and buy 3 pre-cooked Rotisserie chickens . Good food is not measured by how quick you can turn it out, but rather how good it tastes, and how much other’s enjoy your labor of love. I am not trying to be harsh, I am speaking from my heart. Cook this recipe again with everything being fresh, and see what a difference it makes. My boss was a very famous chef, and he taught me well. You might want to try adding a bit of Andouille Sausage and some Tasso, as that would add a tremendous amount of flavor to your recipe. Hugs
I really liked it. Very tasty. I added some cumin for flavor. I used canned diced jalapenos, 2 bads frozen chopped veggies, and added a little chicken broth to make it more soupy. I was going to put it over rice but forgot. It was just fine without the rice. I also used a bit of sour cream as a topping. I also only cooked it about 9 hours instead of 10-12 as recommended. I would very much recommend this meal

Good easy recipe. Prepped the crockpot the night before, and placed in cooker when I got up to save some time. I would make it again, chicken was tender and everything finished within 10 hours. Would server over rice instead of noodles to allow rice to soak up the liquid. Could have used a little more seasoning but I sprinkled some “Slap Your Mama” on top and gave it a nice zing.
nixed the mushrooms, used leg quarters and added sausage. instant hubby chow
Very good. I replaced the tomatoes with rotel and 3/4c chicken broth. Used about 3 1/2 tbsp creole seasoning and added some cayenne pepper. I used chicken quarters because I had them. It had the perfect amount of spice for us and made a lot so I froze 2 helpings. Served over rice. Thanks!
Used organic chicken thighs. Added the following based on other reviews: tomato paste, crushed red pepper, 2 chopped red onions, 2 bay leaves, Tabasco, better than bouillon (chicken broth), & cayenne pepper. Added some oregano as well. Still cooking on low & will put it on top of cauliflower rice.
Made recipe as is, wasn’t good, wasn’t horrible.
I used boneless skinless thighs 2 large packs. 3 jalapeno peppers, 1 sweet bell pepper, 1 large onion, 1 can stewed tomatoes, 1 can tomato paste. Seasoned liberally with creole seasoning. Cooked it in my electric presser cooker for 45 minutes. It is amazing ! Will definitely make it again.
