With fresh tomatoes, cucumbers, onions, green peppers, and herbs, a tomato, cucumber, and pepper salad is created.

Prep Time: 10 mins
Cook Time: 40 mins
Total Time: 50 mins
Servings: 4

Ingredients

  1. 4 large baking potatoes, scrubbed
  2. 2 tablespoons olive oil
  3. kosher salt and freshly ground black pepper to taste
  4. ½ teaspoon garlic powder, or to taste
  5. ½ teaspoon dried parsley, or to taste
  6. 4 tablespoons butter

Instructions

  1. Preheat an air fryer to 400 degrees F (200 degrees C).
  2. Rub potatoes with olive oil and season with salt, pepper, garlic powder, and parsley. Place potatoes in the air fryer basket.
  3. Cook in the preheated air fryer until potatoes are soft, 40 to 50 minutes, depending on potato size.
  4. Slice potatoes lengthwise. Pinch both sides of each potato, using your hands and forcing potatoes to open, until the fluffy insides start to come out. Add 1 tablespoon of butter into each potato.

If you toss the spuds in the microwave for maybe 3 minutes you can cut 30 minutes off the stated cooking time.

I punch the top of the potato with a fork a few times , and press butter down into the holes , grind Himalayan salt over, then cook. Not a huge change, just seems to give them a bit extra flavor.

To do this even quicker we microwave the spuds for 3 minutes to get them cooked and then oil them up with spices and put them into the air fryer for 12 minutes at 400ºF to crisp up the skin. Still tasted great and we also added a dollop of sour cream with chives on top.

So easy to do, and super flavorful. Followed the directions exactly, with 50 minute total cooking time for 1 potato. The coating of oil, along with salt, pepper, garlic powder & parsley made a difference and filled the house with a mouth-watering aroma. This will be the only way I’m making baked potatoes again!@

I had only small russets. After 30 mins on 400 I had perfect 208° – 211° potatoes!

The skin was perfectly crispy!

So easy to make baked potatoes this way. I actually turn my baked potatoes into twice-baked potatoes by scooping out the potato flesh and adding cheese sour cream and bacon. So yummy! I also like to use bacon grease from the air fryer to cover the potatoes for added flavor.

My husband and I really liked this. I used ‘steak seasoning’ with the oil and it smelled heavenly while cooking. The only thing is that I put on the ‘fan’ part of my fryer and it cooked faster so the skin was so crispy it was tough. (cooked at 400 with the fan for an hour) next time I’ll cut back the time. The potatoes were delish!

Delicious! I was curious about being able to make a baked potato in the air fryer…. I set the timer for an hour…. & pulled mine out at about 50 mins…. I think 45 would have been perfect…. the skin was a tad charred but still fabulous!
