Ingredients
- 1 tablespoon vegetable oil
- 1 (2 pound) boneless pork roast
- salt and pepper to taste
- 4 sweet potatoes, quartered
- 1 onion, quartered
- 6 cloves garlic
- 1 (14.5 ounce) can chicken broth
Instructions
- Heat oil in a large, heavy skillet. Season meat with salt and pepper, and brown in oil.
- In a slow cooker, layer sweet potatoes, onion, and garlic. Place browned roast on top of vegetables, and pour in chicken broth.
- Cover, and cook on Low for 6 hours.

This is a really good basic recipe. I followed the recipe exactly. Next time I plan to add some other seasonings, like thyme leaves and rosemary as I think that will take it from good to great in the flavor department. For those who commented that their pork came out dry – more liquid, less cooking time or better quality pork. I raise my own pork – supermarket pork tends to be much leaner (less fat) and therefore drier.
I followed the recipe to the letter and it came out dry. I’m going to tweak it a little bit and see if I can make it more moist and then I’ll check back.
I made this because I thought it was a strange combination of flavors. As it turned out, the meat was moist, potatoes mushy and never tasted the garlic or onions. Actually bland. Family said , ‘NO’.

I adhered to the liquid & veggie modifications in the moments & thus it turned out great! I personally prefer this over rice vs pasta myself but it was a big hit with the family! I doubled the spices & would honestly go over on the meat too. I bought two packages & although I am not sure how much I got we concluded we could have used more!

I LOVED THIS RECIPE. I didn’t have whole cloves so I used the minced that I had. 2 tablespoons of it and it still had the garlic taste. I will surely make it again.
I used “Slap ya’ Momma “ Cajun spice for the pork. Wonderful! Don’t forget to brown the pork well. I used pork country ribs! What a wonderful dish. Mike
