Ingredients

  1. ½ cup vegetable oil, divided
  2. 1 small onion, diced
  3. 2 stalks celery, chopped
  4. 2 slices bacon, diced
  5. 2 medium russet potatoes, peeled and diced, or more to taste
  6. 1 (8 ounce) bottle clam juice
  7. 2 ½ cups minced clams, drained
  8. ¼ cup all-purpose flour
  9. 2 cups almond milk
  10. salt and ground black pepper to taste

Instructions

  1. Heat 1/4 cup oil a large pot over medium heat. Add onion, celery, and bacon to hot oil; cook and stir until bacon fat renders and onion is translucent, about 5 minutes. Add potatoes and clam juice. Increase heat to medium-high and bring to a boil. Cook until potatoes are fork-tender, 15 to 20 minutes. Add clams and cook for 10 minutes more.
  2. Meanwhile, combine remaining 1/4 cup oil and flour in a separate saucepan over medium heat. Stir until paste-like and light golden brown, 3 to 5 minutes. Gradually whisk in almond milk; cook and stir until mixture becomes a thick slurry, 6 to 7 minutes more.
  3. Stir slurry into clam chowder until thickened. Season with salt and pepper; serve hot.
  4. Use 1 cup water in place of clam juice if preferred.

Pretty delicious! I also had to leave the celery and onions out due to a IBS sufferer in the home. Substituted 1 1/4 lbs fresh clams (live in New England)(will double that next time-this was my first time making this so I was nervous haha) and steamed them first then chopped them up and threw them in once the potatoes were done. Also added some peas’n’carrots for good measure. Used Bob’s Red Mill gluten free 1 to 1 baking flour. Threw some fresh chopped parsley and thyme in and gave it a good stir right before serving. It really turned out SO freakin good. Will absolutely make it again!! Bet it would be good with some chives sprinkled on top as well 🙂

Dairy-Free Chowder, Fodmap Style Made this chowder without onions or celery to accommodate the low fodmap diet for IBS sufferers. It turned out much better than I expected. My non-IBS mate liked it fine, he noticed the lack of the vegs. Will make it again. Substituted or added: Hemp for almond milk (some can tolerate almond milk) Garlic infused olive oil and butter rather than just oil King Arthur All Purpose Flour (Gluten Free) Asafetida, almost like onion flavor, ? teaspoon MSG* Juice from canned clams rather than bottled clam juice Had Schär Gluten Free Table Crackers to put in chowder. Yumm *MSG is in just about everything; soups, fast foods (KFC), Doritos. It is not a health issue unless you suffer from an allergy.
