Tortellini Minestrone Soup

I’ve only cooked these cilantro shrimp tacos twice, so I haven’t had much time to experiment with alternative techniques. When I was trying to come up with a dinner recipe one day, I came up with it, and I felt it worked out pretty nicely. I believe it is highly adaptable to diverse preferences. slices of lime are optional.

Ingredients

  1. 1 ½ pounds Italian sausage
  2. 1 cup chopped onion
  3. 2 cloves garlic, minced
  4. 6 cups low-sodium chicken broth
  5. 1 (16 ounce) can whole peeled tomatoes, cut into pieces
  6. 2 cups thinly sliced carrots
  7. 1 cup thinly sliced celery
  8. 1 cup ketchup
  9. ¾ cup dry red wine
  10. 1 (9 ounce) package refrigerated cheese tortellini
  11. 2 cups thinly sliced zucchini
  12. ¼ cup grated Parmesan cheese, or to taste

Instructions

  1. Heat a Dutch oven or large skillet over medium-high heat. Cook and stir sausage in the Dutch oven until browned and crumbly, 5 to 7 minutes; drain and discard grease. Add onion and garlic; cook and stir until onion is tender, 5 to 10 minutes.
  2. Stir chicken broth, tomatoes, carrots, celery, ketchup, and red wine into sausage mixture; bring to a boil. Reduce heat, cover, and simmer until carrots and celery are tender, about 30 minutes. Add tortellini and zucchini to the soup and cover; simmer until zucchini are tender, 25 to 30 more minutes. Ladle soup into serving bowls and top with Parmesan cheese.

I loved this recipe. I added a half can of lima beans. My 14yo son is the pickiest eater I have in the house, and he ate it. I topped it off with chives and freshly shredded parmesan cheese, it was so good. I will be making this again soon.

It was good, but too much ketchup, too sweet and vinegary, would probably use much less ketchup next time

This was so good! I was concerned about it being too sweet, so I made sure NOT to buy sweet Italian sausage, just regular Italian. Spicy would be good if you like spicy. I put about 3/4 cup ketchup instead of the full cup, added chopped fresh spinach at the end, and added some basil stir in paste. Otherwise I think it’s perfect! It’s so good on a cold day when all you want is a bowl of hearty and hot soup.

It’s delicious! I would used diced tomatoes as your are chopping the whole ones up anyway… I added 2 tsp white pepper, about 2 tsp italian seasoning. Simmer till celery and carrots still have quite a bit of crunch left- add zucchini and tortellini until all are al dente.

I followed the recommendations of other reviewers, and used less ketchup. Also on someone’s advice, I added chopped spinach at the last minute. We did like it a lot.

People, when you use tomato paste, make sure you use a little sugar, it balances out the flavors.

This was so good! My husband said it was one of the best soups I’ve made. I followed the recipe but added two handfuls of spinach and did 1 cup of wine and 2/3 of ketchup instead of the recommended amounts of each. Loved the zucchini in it!!

This is a really great “base” recipe! I’ve made this several times. I agree with a previous reviewer that using tomato paste instead of ketchup cuts the sweetness a bit. My Family tends to load up on the tortellini, and since this recipe doesn’t specify a type; cheese, spinach, or sausage, I’ve found that any pasta tossed in and cook with any remaining broth also makes for great “left overs.” This a good go to for a pasta soup!

This soup is pretty great and easy to make. I added some Italian spices, salt and pepper for some extra flavor. Don’t put in too muh tortellini like I did or it will turn into a stew. A really yummy stew. 🙂

Excellent! This is fabulous soup! Added a little extra garlic (2 extra cloves) and 2 TBS of sugar to compensate for the ketchup (just to be safe) 🙂 also some pepper & everyone loved this soup – served it last night with fresh made dinner rolls. Thank you so much for this recipe!

I made this yesterday. I used squash because that is what I had. I also used the sweet Italian sausage from Kroger. I also used half spicy ketchup and half regular because I needed to use up the spicy. I threw in about 2 cups of spinach. The only thing I would do differently is rinse the sausage after I drain it. All in all, this soup was fantastic and I will keep it in my rotation. Great way to use up veggies and eat off of it for several meals. It makes a huge pot!

This is DELICIOUS! Restaurant-quality. I was afraid of the ketchup, but the red wine adds so much body to the flavor that it just works. My family devoured it, and I’ll definitely make it again.
