Peruvian Aji Verde

These are excellent for both a midday tea and a super bowl party. Make extras because they are really addicting.

Ingredients

  1. 2 bunches fresh cilantro with stems
  2. 3 jalapeno peppers, seeded
  3. 1 lime, juiced
  4. 3 cloves garlic
  5. ½ cup reduced-fat mayonnaise, or more to taste
  6. 1 drizzle extra-virgin olive oil, or more to taste
  7. salt and ground black pepper to taste

Instructions

  1. Blend cilantro, jalapenos, lime juice, garlic, mayonnaise, olive oil, salt, and pepper together in a food processor or blender. Blend in more mayonnaise or oil to adjust thickness if desired.
