Grilled Chicken Salad Sandwich

This is a fantastic way to utilize up grilled chicken breasts from the previous night’s dinner. On wheat, I enjoy it. On sourdough, my husband enjoys it.

Ingredients

  1. 1 cup mayonnaise
  2. ⅛ teaspoon ground black pepper
  3. ⅛ teaspoon garlic powder
  4. ⅛ teaspoon celery salt
  5. 4 cups chopped leftover grilled chicken
  6. 2 celery stalks, sliced
  7. ½ cup sweetened dried cranberries
  8. ⅔ cup salted cashews
  9. 8 slices bread, toasted
  10. 4 tablespoons mayonnaise
  11. 4 large red leaf lettuce leaves
  12. 1 ripe tomato, sliced

Instructions

  1. Whisk together 1 cup of mayonnaise, pepper, garlic powder, and celery salt until combined. Combine the chicken, celery, cranberries, and cashews in a large bowl. Pour the mayonnaise mixture over the chicken mixture and stir until evenly combined.
  2. Spread 1/2 tablespoon of mayonnaise on each slice of toasted bread. Divide the chicken salad between four of the slices of toast; top each with a lettuce leaf and a slice of tomato. Complete each sandwich with the remaining toast slices.

Delicious. I added more celery for crunch, and used avocado mayonnaise, because that was what I had on hand. I served it to guests on croissants, and everyone loved it. I will make it often when I have leftover rotisserie chicken.

So delicious!! I was never a huge fan of grapes in chicken salads but the dried cranberries are perfect. I followed the recipe almost exactly except instead of grilled chicken I used canned chicken and romaine lettuce. Best thing I’ve eaten in a while. Thanks!

Whole family loved it, even the picky eaters. No one wanted it as a sandwich. We ate it straight off the plate. Only change I would make is cutting back on the 1C mayo a hair. Makes it a touch soupy.

We love it. I make my husband lunch everyday and surprised him with this one. I used Costco chopped chicken. So I had to half the recipe. He loved it and so did I, I am not a fan of canned chicken and it was really good. I used chopped almonds because that is what I had on hand.

The cranberries were a different touch but if I make this again I’ll sub for canned sliced or omit the cranberries period. Also used regular iceberg lettuce shredded and added to the mixture and went easy on the mayo because one cup is too much imo. I also added a slice of processed cheese. Added a small amount of cashews just to the sandwich to try it and will definitely not do that again, the sandwich didn’t know what it was supposed to be, there’s just too much flavors going on.
