Light and Crispy Fried Halibut

For Thanksgiving or any other fall-themed meal, this dish is ideal. The sweetness of the potatoes and the squash blend well together. I use Costco® apple gouda chicken sausages for this recipe, but any other chicken sausage will work. This recipe was originally devised by me by combining leftovers in the refrigerator that needed to be prepared. Everyone in our household now considers it a staple.

Ingredients

  1. oil for frying
  2. 2 eggs, beaten
  3. ¼ cup milk
  4. 1 tablespoon all-purpose flour
  5. ½ (8 ounce) package panko bread crumbs
  6. ½ cup seasoned bread crumbs
  7. 1 pound halibut, cut into 2-inch squares

Instructions

  1. Heat oil in a deep fryer or large saucepan to 350 degrees F (175 degrees C).
  2. Whisk eggs, milk, and flour together in a shallow bowl. Stir panko bread crumbs and seasoned bread crumbs together in another bowl.
  3. Gently dip halibut into egg mixture, then press gently into bread crumbs to coat both sides. Place the breaded halibut, unstacked, onto a plate. Repeat with remaining halibut.
  4. Lower halibut carefully into the hot oil in batches. Fry until golden brown and crisp on the outside, 4 to 5 minutes. Transfer to a paper towel-lined plate to drain. Repeat with remaining halibut.

It’s a good basic recipe, but a bit bland so I added some Old Bay seasoning which helped out. Also, watch your oil temp. Halibut cooks very quickly so you may need as little as 3 minutes, 5 or 6 minutes is way too long.

i made this, first batch i cooked close to five minutes and quickly started reducing cook time to 3 minutes 45 seconds and monitored last half minute. These came out perfect, just add fresh lemon juice and dip in tarter sauce. i cut halibut in 1/2 inch strips.

Excellent recipe. The panko adds a perfect level of crunch. The seasoned bread crumbs add a good flavor. I added some additional seasonings just because I like strong flavors. The best part about this recipe is once you do your fish, you can add some sweetened coconut flakes to the mix and use the same method to make coconut shrimp.

Next time I would add salt to the breadcrumbs and make way less wash. I hate wasting good farm eggs! Or, alternatively, I’d definitely buy more fish as my whole family ate this up fast!

Made this by pan frying, came out delicious. Used original bread crumbs, so seasoned the halibut with salt, pepper, and a little garlic powder prior to dipping in the egg mix.

I used this recipe to make Black Sea Bass. I mixed all ingredients together and added more milk to thin out. I added salt, pepper, onion powder, garlic powder and old bay. Then fried them. They are delicious.

Something about the combination of bread and Panko crumbs creates a great crunchy crust!! It’s a keeper for any type fish you fry! We have used it on walleye too!! Yum!
