Tea Room Chicken Salad Sandwiches

These were delicious and I recently had them in a tea shop.

Ingredients

  1. ½ cup sour cream
  2. ½ cup mayonnaise
  3. ½ teaspoon lemon juice
  4. ¼ teaspoon lemon zest
  5. salt and ground black pepper to taste
  6. ½ cucumber, cut into matchsticks
  7. ½ bunch fresh dill, finely chopped
  8. ½ small bunch fresh cilantro, chopped
  9. ¼ cup finely chopped fresh chives
  10. 1 tablespoon slivered toasted almonds
  11. 1 whole roasted chicken, bones and skin removed, meat cut into cubes
  12. 12 slices white (or your favorite) bread, crusts removed, or as needed

Instructions

  1. Mix sour cream, mayonnaise, lemon juice, lemon zest, salt, and pepper together in a bowl until thoroughly combined. Add cucumber, dill, cilantro, chives, and almonds and combine. Add chicken and combine thoroughly with dressing.
  2. Create sandwiches with your bread; cut sandwiches into fourths.
  3. You can use yogurt instead of sour cream.

Make this chicken salad your own! The recipe doesn’t have exact on the herbs and I would add more almonds if you want crunch. A tasty chicken salad indeed!
