Kid-Friendly Ground Beef Stew

I developed this recipe for hamburger stew while my children were young. I was looking for a straightforward dish that I could prepare the night before and throw in the slow cooker right before leaving for work. And my kids appreciate the abundance of vegetables in it! They devour it! a beautiful loaf of crusty bread goes well with this.

Ingredients

  1. 1 pound ground beef
  2. ¼ medium head cabbage, cut into chunks
  3. 1 small head broccoli, cut into florets
  4. 2 medium potatoes, cut into 1/4-inch slices
  5. 1 medium onion, chopped
  6. 1 cup baby carrots
  7. 1 cup frozen peas
  8. 1 (46 fluid ounce) bottle vegetable juice (such as V8®)
  9. salt and ground black pepper to taste

Instructions

  1. Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  2. Transfer ground beef to the bottom of a slow cooker. Layer cabbage, broccoli, potatoes, onion, carrots, and peas, one by one, on top of the meat. Pour vegetable juice over top. Season with salt and pepper.
  3. Cover and cook until vegetables are tender, 6 to 8 hours on Low, gently stirring after a few hours of cooking.
  4. You can adjust the quantities depending on the size of your cooker, and can use any herbs and spice that you like.

This turned out well. It makes a bunch! It is bland, so I added Italian seasoning.
