Great old Maine recipe for rich and smoky pumpkin bread. The bread truly improves in flavor the next day after baking. It can be made quickly and is ideal for gift-giving over the holidays.

Ingredients
- 5 tablespoons white sugar
- 2 teaspoons ground cinnamon
- 5 medium apples – peeled, cored, and thinly sliced
- 3 cups all-purpose flour
- 2 cups white sugar
- 1 cup vegetable oil
- ½ cup orange juice
- 4 large eggs
- 3 teaspoons baking powder
- 1 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 10-inch tube pan.
- Mix 5 tablespoons sugar and cinnamon together in a large bowl. Add apple slices and toss to coat.
- Mix flour, 2 cups sugar, oil, orange juice, eggs, baking powder, salt, and vanilla extract together in another bowl and beat until smooth and thoroughly blended. Batter will be thick.
- Place 1/2 of the batter in the prepared tube pan. Top with 1/2 of the apple slices. Add remaining batter to the pan, and neatly arrange remaining apple slices on top.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour and 15 minutes. Let cool in the pan for 1 hour. Run a table knife around the edges to loosen. Invert carefully onto a cooling rack to cool completely.
- Use your choice of apples….Granny Smith for a more tart taste, or any firm apple that will hold its shape during baking.
- You can use canola oil instead of vegetable oil.

A decent cake. Something different. Not sure I would make it again.
I have been making this for over 30 years!!! My daughter saw me peeling Apple’s today & asked what they were for. When I told her it was this recipe, she told me it was not a good idea!! Only because she will eat way too much of it!!! Turned out perfectly!!! I sometimes replace the Orange juice in the fall with Apple cider. Excellent recipe, highly recommend it!!!!!!!
Made recipe exacting as per directions with no changes, used granny smith apples. It was AMAZING!!! Moist, sweet and will be a staple in our family and I will definitely be making it for get togethers.
Yes, a fantastic recipe and fun to make and eat!
I have made this several times since i saw it in the All Recipes magazine . It was a big hit each time. I made no changes to the recipe. It is a wonderful cake and easy to make
My second time making this cake… Felt much more confident this time. Loved it!
Absolutely amazing! I did use 1 less apple and egg, and it was perfect. Will definitely make this again
Excellent cake. Everyone loved it. However, I would note that this recipe online is a little different from the magazine. Online states to use a tube pan (magazine states Bundt, which is what I used). Online states to mix everything together at once (magazine you mix wet ingredients, then add dry….which is what I did). I mention this as a friend made the online version and it did not turn out near as well as mine.
We put in way too many apples but this was still super good. I ate way too much!
Excellent recipe but 2 cups of white sugar is overkill. I use a blend of raw sugar and Splenda which lowers the calorie content with no loss of flavor. The apple cinnamon taste is actually better with less sugar. I also use a half cup of vegetable oil and half a cup of plain yogurt rather than a full cup of oil. Then I can eat more cake…..
Best apple cake I have ever tasted! The recipe in your magazine called for dusting with powdered sugar once the cake was cool. My favorite part is the sliced apples that are on bottom of cake one inverted taste almost like dried apples. To get the apples thinly sliced, I used a mandoline and the task was done quickly!
Followed recipe – this was a hit! In fact had requests for make again, and again..
I was looking for something a bit different and decided to try this recipe. My family really liked this cake. It was a dense cake and holds well with good flavor. I did use the granny smith apples to balance the sweetness.
Very moist and flavorful. I fanned the apples and it was beautiful. I would make it again
The perfect fall apple cake dessert! We loved it and I promised to make it again and again!
Great recipe, delish.
Loved this Will do it again..
