Ingredients

  1. 1 pound shredded, cooked chicken breast meat
  2. ¼ cup mayonnaise
  3. ¼ cup plain Greek yogurt
  4. 1 medium avocado, chopped
  5. 1 stalk celery, diced
  6. 2 tablespoons freshly squeezed lime juice
  7. 2 tablespoons chopped green onions
  8. 1 tablespoon garlic powder
  9. 1 teaspoon chopped fresh cilantro
  10. ½ teaspoon salt
  11. ½ teaspoon ground black pepper

Instructions

  1. Mix chicken, mayonnaise, Greek yogurt, avocado, celery, lime juice, green onions, garlic powder, cilantro, salt, and pepper together in a large bowl until well combined. Cover and refrigerate for at least 30 minutes to let the flavors blend together.

Cool, refreshingly light for summer. Easy to accomplish. One could make sandwiches. We just spoon fed ourselves! It was that kind of afternoon! Followed the recipe as written. Really liked it. The second time we subbed the breast for thigh and added dill. Next time we may mix breast and thigh. We think we came as close to the original to give the original a 4 and given our preferenced tweak a 4 as well. Win-win.
