The sweet potato pancakes at Cracker Barrel® made me swoon. I made the decision that I wanted to create my own, healthier variation. This is what I came up with, and every time I’ve made these, people have loved them! They are very healthy and delicious at the same time. Win, win! These pancakes taste great with just about any topping and are incredibly nutritious all around. Simply add your preferred topping once you’re finished. I enjoy honey, agave, and Trader Joe’s® Maple Agave Syrup. Enjoy!

Ingredients
- 1 sweet potato, cubed
- 3 eggs
- ½ cup milk (Optional)
- ½ cup oats, ground to flour
- 2 scoops vanilla protein powder (Optional)
- ¼ cup flax seeds
- 2 teaspoons pumpkin pie spice (such as Trader Joe’s®)
- ½ teaspoon baking powder
- 1 large banana, sliced
- 2 ½ tablespoons almonds
- 2 ½ tablespoons pecans
- 2 ½ tablespoons walnuts
- 2 tablespoons coconut oil, or as needed
Instructions
- Fill a pot with water and bring to a rolling boil. Stir in sweet potato and return to a boil. Cook until sweet potato is tender, 7 to 10 minutes; drain.
- Mash sweet potato in a small bowl with a fork.
- Mix 1 cup mashed sweet potato, eggs, milk, oat flour, protein powder, flax seeds, pumpkin pie spice, and baking powder together in a bowl. Stir in banana, almonds, pecans, and walnuts until batter is combined.
- Melt coconut oil in a skillet over medium heat. Pour enough batter into the skillet to create a 4- to 6-inch pancake. Cook, flipping once, until golden brown, 3 to 5 minutes per side.
- You may opt to use some vanilla extract to taste if you decide not to use vanilla protein powder.
- If you prefer, 1 teaspoon ground cinnamon, 1/2 teaspoon ground ginger, and 1/2 teaspoon of ground nutmeg can be substituted for the pumpkin pie spice.
- Almond milk can be substituted for the milk if desired.

I love these! They kind of taste like French toast!
Loved it with two notes: Consider adding a dash of salt and I advise 4″ more than 6″ size. The larger ones are harder to flip successfully.
These were the best pancakes i ever had. They caught my eye cause im also a cracker barrel and trader joe guy. I used to use box protein pancake mix from trader joes and top with Acai, berry mix by Dole, i warm it in microwave and top the pancakes with it. its like a warm berry topping, all natural sweetness. i used to think i was eating the healthiest pancakes till i had these. This added more protein with the nut and powder mix plus popping with awesome flavor. Nice treat for after a good workout. Thanks for sharing. Just when you thought you were eating something healthy, this is much more healthy and fun to make.
These pancakes are delicious and full of great nutrition!!! I always use stevia sweetened Greek yogurt and my own blueberries and raspberries frozen from the summer harvest so this breakfast has only natural sugar. I will be making these pancakes often.
My family loved this dish. Full of flavor and textures. I have been wanting to make this for quite some time and was not disappointed. I added chocolate protein powder because that is what I had, but it worked well. I also baked in the oven rather than on a griddle, at 400 degrees for 15 minutes each side on parchment paper and they turned out great! Will become a breakfast staple for us since they are easy to heat up for a quick breakfast all week. Thank you!
These were really good! I omitted the vanilla protein powder because I didn’t have any. I’ve made them twice so far and will be making again. Just the right amount of sweetness!
I made these as written and personally I wasn’t a huge fan but my husband and son liked them but said they were bland. I had texture issues as the pancakes were very moist. I did use the substitution as written for pumpkin pie spice and vanilla.
