This recipe is enjoyable to make and delicious. The tostada foundation on which Mexican fajita shrimp is served is unexpectedly crispy. With this dish, timing is crucial. Make sure to get all of your fixings (lettuce, tomatoes, cilantro, and jalapeño peppers) ready before you cook the shrimp if you want your fajita combination to sizzle when you serve it. Put the ingredients, shredded cheese, and sour cream on a serving platter.

Ingredients

  1. 1 (14 ounce) can refried beans
  2. 1 teaspoon chili powder
  3. 1 tablespoon vegetable oil
  4. ½ pound frozen tail-off shrimp, thawed
  5. ½ cup sliced green bell pepper
  6. ½ cup sliced red bell pepper
  7. ½ cup sliced onion
  8. 2 tablespoons soy sauce
  9. 1 ½ teaspoons fajita seasoning
  10. 1 ½ teaspoons lemon pepper
  11. 1 (12 ounce) package crispy red tostada shells

Instructions

  1. Mix refried beans and chili powder together in a microwave-safe bowl. Microwave on high until heated through, about 2 minutes. Cover to keep beans hot.
  2. Heat oil in a large skillet over high heat. Add shrimp, green bell pepper, red bell pepper, and onion. Stir in soy sauce, fajita seasoning, and lemon pepper. Cook and stir until shrimp is evenly coated and lightly browned, about 5 minutes.
  3. Bring shrimp mixture to the table in the hot skillet. Spread refried beans over tostada shells; pile shrimp mixture on top.

These are good, but they weren’t enough to turn my refried bean-hating family into lovers. They definitely need toppings. I had to use regular tostadas as well.

I made my own refried beans and I never was able to find the red tostada shells so I just used the regular ones. This turned out pretty good. I thought the bean and shrimp combo sounded odd but it worked good together. I made my shopping list from the ingredient list so I didn’t see the other ingredients mentioned in the recipe description. A layer of shredded lettuce between the beans and shrimp would have been a nice touch. Good recipe though and one I would make again.
