Salted Cashew Sweet Potato Fudge

An original take on the traditional white chocolate fudge recipe! Bruce’s® Yams Salted Cashew Sweet Potato Fudge is a nutty, sweet delight that no one will expect but will instantly appreciate. It is also quick and simple to make.

Ingredients

  1. 12 ounces white chocolate chips
  2. ½ cup Bruce’s® Yams Cut Sweet Potatoes in Syrup, drained and mashed
  3. 1 tablespoon heavy cream, warmed
  4. 1 teaspoon vanilla extract, warmed
  5. 1 teaspoon salt
  6. ¼ teaspoon nutmeg
  7. ¼ cup smooth cashew butter
  8. ¼ cup chopped salted cashews

Instructions

  1. Spray a 4 x 5-inch glass dish with non-stick baking spray; set aside.
  2. Warm a glass bowl and add white chocolate chips. Heat in microwave, stopping every 20 seconds to stir.
  3. When melted, stir in mashed Bruce’s® Yams Cut Sweet Potatoes, cream, vanilla, salt and nutmeg. Mix quickly, then add cashew butter and continue to mix until very smooth. Pour mixture into prepared dish. Sprinkle with chopped cashews (patting them gently into fudge).
  4. Refrigerate for a minimum of 2 hours.
  5. This fudge gets soft when left at room temperature; store in the refrigerator.

This was easy to make and had a unique taste- always a wonderful thing! I dislike peanut butter anything but the cashew flavor, while similar, was delicious. The ONLY thing that was off was the refrigeration time. A minimum of two hours implies it will be fine in two hours. I actually had to refrigerate this for 6 hours before it had set enough to be fudge- a disappointment because I had to serve it while it was still spoon-feed material. Once it hardened though, it was great.
