Ingredients

  1. 1 tablespoon olive oil
  2. 1 yellow onion, halved and sliced
  3. 1 red bell pepper, chopped
  4. 2 tablespoons balsamic vinegar
  5. salt and pepper to taste
  6. 2 (8 ounce) fillets tilapia fillets
  7. 2 teaspoons olive oil
  8. 1 cup crumbled blue cheese
  9. 4 cups mixed salad greens

Instructions

  1. Preheat an oven to 350 degrees F (175 degrees C).
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Cook onion and red pepper in the oil until onion is tender and golden, and peppers are slightly soft, about 10 minutes. Stir balsamic vinegar into the vegetables; season with salt and pepper.
  3. Rub tilapia filets with 2 teaspoons olive oil and a sprinkle of salt and pepper. Place fillets in a small baking dish, and top with the balsamic onion mixture. Sprinkle fish evenly with blue cheese.
  4. Bake in preheated oven until fish flakes easily. Serve atop salad greens.

Made it as written. Only fair as the good quality blue cheese overpowered the fish. Might be a 4* if less blue cheese used.

041923- Riley only likes salmon. Need to work on it a little more. Good for everyone else. Served with Rice and green beans with mushrooms. Used Feta instead of Bleu Cheese. 021522 5 stars.

This was a great recipe for tilapia added a lot of flavor. I only gave it 4 stars because it has no instructions in the recipe for how long to cook it! I ended up having to check it every 10 minutes or so and finally took it out after about 20-25 minutes. Followed the recipe as written except: used Parmesan cheese (don’t care for either blue or feta cheese) – and next time I will use mozzarella – and added some halved cherry tomatoes to the top. I did serve it on some salad greens per the recipe and that was a very nice touch – especially with the tomatoes!

Like others, I used feta instead of blue cheese because that was what I had, but I will try it again with blue cheese, which sounds amazing. My husband and I really liked the color and flavor of this dish, which improved an otherwise rather bland fish, and it’s light and healthy too!

Found this recipe after I bought talipia for the first time. Used what I had on hand which was yellow and orange bells, a mixture of half blue cheese, half brie with herbs & then I read the reviewers who suggested feta which I also had – oh well!. Used a little more balsamic thinking it would be great over the salad greens & it was. My husband really liked it. Next time I’ll use only blue or only feta cheese.

This was great! I rarely measure ingredients exactly so I can’t say this recipe is great as is. I loved the basalmic flavor on the veggies! I only made one cod filet and baked it for ten minutes. I used parmesan cuz that was the only kind of cheese I had.

Good way to jazz up a normally pretty bland fish. I added some cherry tomatoes to the onion and bell pepper. Was a little generous with the balsamic. Added feta after it came out of oven. Nice change of pace . . .

Great recipe! Not a blue cheese fan so left it out completely, used melted butter with sautéed garlic over the fish instead of oil and I added thin carrots as well. We really enjoyed this.

This was delicious, will definitely make again. Before baking, I sprinkled the fish with Sazon Tropical, and added a little balsamic salad dressing in the bottom of the pan. I used two shallots in place of the onion, and added a little chopped jalapeno. I added red pepper flakes to the oil. I omitted the cheese (as my daughter doesn’t eat cheese), and baked for 18 minutes at 375. The fish was flavorful and not dry. Served over yellow rice – thanks for sharing!

I made this with cod (cause I can’t tell the difference anyway) and pepper jack cheese slices rather than bleu cheese sprinkles. I used a whole onion and half a bag of frozen bell peppers. Followed all the instructions (except I only had small foil bread/cake pans) so I put the fish in, then 2 slices of cheese, then the onions/peppers. Covered with tinfoil and baked for 17 minutes. It was pretty good.
