Oatmeal Banana Brownies

Ingredients

  1. 1 ½ cups quick cooking oats
  2. 1 cup brown sugar
  3. ⅔ cup whole wheat flour
  4. ⅔ cup cocoa powder
  5. ⅓ cup all-purpose flour
  6. 1 ½ teaspoons baking powder
  7. 1 banana
  8. 2 eggs
  9. ½ cup butter
  10. ⅓ cup milk
  11. ¼ cup applesauce
  12. 2 tablespoons vanilla extract
  13. ¼ cup chocolate chips

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking pan.
  2. Mix oats, brown sugar, whole wheat flour, cocoa powder, all-purpose flour, and baking powder together in a large bowl; mash in banana. Stir in eggs, butter, milk, applesauce, and vanilla extract; mix thoroughly until batter is smooth. Pour into the baking pan. Sprinkle chocolate chips on top.
  3. Bake in the preheated oven until a toothpick inserted into the center comes out clean, 40 to 45 minutes.
  4. Substitute margarine for butter if preferred.
  5. Mix the brownie batter with an electric mixer instead of by hand if you prefer.

I substituted 1/3 cup coconut flour and 2/3 cup almond flour. I also used coconut brown sugar and coconut oil in place of the regular brown sugar and butter. And I added one shot of creme de coco liqueur. I used Lily’s dark chocolate chips on top. This is the only “healthy” brownie recipe I have found that my family actually likes! Thank you so much!

My version was with 3 bananas, no applesauce, 1 cup all purpose flour instead of wheat flour, and a little extra oats because my mix was runny. It turned out good.

BEWARE OF BREAKING TEETH! This recipe will make a chocolate concoction that is dry and hard-as-bricks. Recipe is not tested–total waste of time and energy to make. Since I really like the concept of oatmeal, applesauce, bananas with chocolate cake, I modified the recipe so that the product has a soft, moist cake-like consistency. Plus, you can actually taste the applesauce and bananas—yum! Below is my modified recipe. Ingredients 1 1/2 cups quick cooking oats 1 cup brown sugar 2/3 cup whole wheat flour 2/3 cup cocoa powder 1/3 cup all-purpose flour 1 1/2 teaspoons baking powder 2 bananas 2 eggs 1/2 cup butter (melted) 1 cup milk 3/4 cup applesauce 2 tablespoons vanilla extract 3/4 cup chocolate and white chocolate chips

This was cake like, dry, and not fudgy. My 9 year old liked it…. Wont make again.

Perhaps I’m biased, but I thought these were awesome. 🙂 I’ve adjusted the recipe a bit since I first wrote it. Adding an extra banana and upping the milk to 3/4 cup (or even 1 cup) makes for moister, more flavourful brownies.
