My Italian great-grandmother passed down this straightforward and delectable recipe to me.

Prep Time: 10 mins
Cook Time: 20 mins
Total Time: 30 mins
Servings: 7
Yield: 7 servings

Ingredients

  1. 2 (8 ounce) jars tuna packed in oil, drained
  2. 1 cup grated Parmesan cheese
  3. 1 cup Italian-seasoned bread crumbs
  4. 1 large egg, beaten
  5. ¼ cup olive oil
  6. 1 (8 ounce) can pasta sauce

Instructions

  1. Combine tuna, Parmesan cheese, bread crumbs, and egg in a medium mixing bowl. Form into around 7 patties.
  2. Heat oil in a skillet over medium-high heat. Lightly brown patties in the hot oil, 2 to 3 minutes per side.
  3. Bring pasta sauce to a simmer in a separate skillet. Add tuna patties, cover with sauce, and let simmer for 10 minutes.

i did modify the recipe by using Greek rather than Italian seasoning because I prefer it. I didn’t have spaghetti sauce so I use the remainder of tomato sauce combined with a searfood lemon dip (1/2T each butter and cornstarch, 1/3 c water, 1/2 c lemon – the cornstarch keeps any leftover from separating-and salt and pepper to taste) That made a tangy tomato sauce that went well with the patties. I topped with grated mozarella cheese and melted it for additional decoration.
