Have you ever wondered what to do with the ham bone left over from the holidays, whether it was a spiral ham or a standard ham? You can create one last delicious supper from this soup without spending a lot of money, though!

Ingredients

  1. 1 (16 ounce) package dried lima beans
  2. 2 quarts water
  3. 1 ham bone with meat
  4. 1 large onion, sliced
  5. 3 tablespoons brown sugar
  6. 1 tablespoon Worcestershire sauce
  7. 1 teaspoon hot pepper sauce (Optional)
  8. 1 teaspoon dry mustard
  9. ½ teaspoon salt

Instructions

  1. Place lima beans in a large bowl and cover with several inches of water; soak 8 hours to overnight.
  2. Bring water, ham bone, and onion to a boil in a pot. Reduce heat, cover, and simmer until onion is tender, about 1 hour.
  3. Drain and rinse lima beans and add to the pot with the ham bone. Add brown sugar, Worcestershire sauce, hot sauce, dry mustard, and salt. Simmer, covered, about 2 hours. Uncover and continue simmering soup until beans are tender, about 30 minutes more.
  4. Remove ham bone from soup; cut the meat into bite-sized pieces. Discard bone and return meat to the soup.

Pretty good and a great way to use the ham bone. I did end up adding more salt, hot sauce, and some herbs after tasting it but that was the only change I made.
