Air Fryer Roasted Salsa

Ingredients

  1. 4 Roma tomatoes, halved lengthwise
  2. 1 jalapeno pepper, halved and seeded
  3. ½ red onion, cut into 2 wedges
  4. cooking spray
  5. 4 cloves garlic, peeled
  6. ½ cup chopped cilantro
  7. 1 lime, juiced
  8. salt to taste

Instructions

  1. Preheat the air fryer to 390 degrees F (200 degrees C).
  2. Place tomatoes and jalapeno skin-side down into the air fryer basket, along with red onion. Lightly spray vegetables with cooking spray to help the roasting process.
  3. Air fry vegetables for 5 minutes. Open basket and add garlic cloves. Spray lightly with cooking spray and air fry for an additional 5 minutes.
  4. Transfer vegetables to a cutting board and allow to cool for 10 minutes.
  5. Remove skins from tomatoes and jalapeno, if desired; they should slip right off. Chop tomatoes, jalapeno, and onion into large chunks and add to the bowl of a food processor. Add garlic, cilantro, lime juice, and salt. Pulse several times until vegetables are finely chopped; do not over-process. Serve at room temperature or refrigerate to let flavors meld.
  6. For a spicier salsa, leave some or all of the seeds in the jalapeno.

This is fantastic! The salsa has a roasted flavor that is perfectly balanced. The next time I will seed the tomatoes to give it a thicker consistency. I will also use a spicier pepper for more heat, even though the jalapeno is perfect for a mild salsa. Excellent recipe, just excellent.

I was looking for an easy recipe to make salsa the way my BIL’s wife does. This was it! So delicious! Although I didn’t use an air fryer, I made the recipe as directed after roasting the tomatoes, garlic, onion, and a large jalapeno on the grill. My jalapeno was actually quite hot and lended to a good amount of heat in the salsa, which we enjoyed. Thank you for this perfect salsa recipe!

Outstanding! This is absolutely delicious. So easy and simple to make. This is one of those recipes where you stop and say to yourself ‘Now why didn’t I think of that?’ The only change I made was I used 4 Serranos instead of 1 jalapenos because I like my salsa very spicy.
