Ingredients

  1. ⅓ cup distilled white vinegar
  2. ⅓ cup white sugar
  3. ½ teaspoon ground coriander
  4. ½ teaspoon crushed red pepper flakes
  5. ½ teaspoon salt
  6. 2 pounds cucumbers – halved, seeded, and sliced
  7. ½ cup finely chopped red onion
  8. 2 roma (plum) tomatoes, chopped
  9. 2 tablespoons chopped fresh cilantro
  10. 2 tablespoons chopped fresh mint
  11. ¼ cup chopped roasted peanuts
  12. 2 sprigs fresh mint sprigs

Instructions

  1. Whisk together the vinegar, sugar, coriander, red pepper flakes, and salt in a salad bowl until the sugar is dissolved. Stir in the cucumbers, onion, tomatoes, cilantro, and chopped mint, and toss to coat with dressing. Cover and refrigerate for 1 hour to blend the flavors.
  2. Before serving, toss again with chopped peanuts, and garnish with sprigs of fresh mint.

This was so good, perhaps our favorite cucumber salad yet. The red pepper flakes add an unexpected zing. I used toasted cashews instead of peanuts as I didn’t have those; other than slightly over-toasting them (oops) they were a good substitute. Everything else was per the recipe, and I don’t think I’d make any adjustments the next time I make it.

I followed the recipe exactly except used tomatoes from my garden instead of Roma. This is, without question, my favorite cucumber recipe of all time. Surprisingly, it is still good after 3 days. It says it is 4 servings. I would say more like 6 generous servings.

I used Stevia instead of the sugar for the dieters in my house, but other than that, made it as directed. My mother-in-law loves this. It’s a bit sweet for me, and I feel that it needs a touch of fish sauce or soy sauce, which I’ll add when I make this again.

Great salad, so refreshing! Made it with my sister who doesn’t like cilantro, so we left that out. Substituted the peanuts with cashews as well. Will definitely be making this salad again and again.

I add a piece of ginger and clove crush garlic to the rice vinegar and sugar,then put on low heat to melt sugar, strain and let cool then add pepper flakes,pour over cucumber and red onions,cover and put in refridgerator,sprinkle with peanuts and cilantro when ready to serve.
