The more upscale Italian restaurants serve this dip, and I believe I have finally mastered it. It goes well with French bread and is also a superb salad dressing. When you next eat Italian food, give it a try!

Ingredients
- ¼ cup olive oil
- 5 cloves garlic
- 2 tablespoons balsamic vinegar
- 2 tablespoons Parmesan cheese
- 1 tablespoon crushed dried oregano
- fresh ground black pepper, to taste
Instructions
- Pour the olive oil onto a salad plate. Use a garlic press to press the garlic cloves onto five different spots on the plate. Drizzle the balsamic vinegar over the oil and garlic. Sprinkle with Parmesan cheese and oregano. Season with black pepper.

LOVE this dip! I have made this multiple times as written as well as with some changes. I have used the garlic called for as well as garlic powder – both work well. I have also used apple cider vinegar in place of the balsamic (in a pinch)… it worked as well. As written though… great recipe! Thanks! 🙂
I made it mostly according to the recipe. I used garlic cloves from a jar and added some ground sea salt with the ground pepper on top. It was an outstanding way to use some homemade bread we had on hand.
Soooo good! I didn’t have balsamic vinegar so I used balsamic salad dressing instead.
A little too much balsamic vinegar, but otherwise, it was great.
We have a little local Italian restaurant here in town. The owner moved here from Italy and started the restaurant. They make a bread dip that tastes almost exactly like this! I LOVE this dip!
There used to be an Italian restaurant near to my aunt’s house that served a “bread dip” as a appetizer. The restaurant sadly closed down due to the bad economy, which led me to google “Italian bread dip”. This is the recipe I found. I absolutely LOVE this recipe! I made it just the way it is, all though I sometimes add red pepper flakes or cut back on the garlic. It’s sinfully delicious with my mom’s home-made white bread.
I have made this 3 times for different holiday functions and it has been the hit of the party each time. I followed the directions exactly. Thanks so much for this crowd pleaser.

This was good. I liked it, and my husband loved it. To my surprise I found it a little plain. I may try it with a little less oil next time and see if that doesn’t concentrate the flavor a little bit.

I really liked this dipping sauce. Especially with a good rustic bread. Next time i will make with three cloves of garlic and one tablespoon of the balsamic vinegar, then add some kosher salt. I’ll also try it with gorgonzola cheese. Yum!

Magnificent ! Better than any restaurant or store bought, because you can add more or less ingredients to your preference. I leave out the balsamic sometimes. It is good with or without it.
Waaaay too garlicky for me, but this recipe has potential. I will try cutting the oregano back to 1 teaspoon, maybe even substituting it with Italian herb blend and omitting the garlic completely (I’m not a garlic fan anyway) to enjoy the fruity oil more. As written, unfortunately it’s not for me.
I’ve tried a similar dip but the garlic and fresh oregano were toasted in the olive oil, giving a better all-around flavor.
