Slices of mushroom with crisp edges and juicy, soft centers. Although they are also delicious with chicken, I prefer to serve these with grilled steak, salmon, or pork tenderloin.

Ingredients

  1. 1 (12 ounce) package silken tofu, cut into cubes, or to taste
  2. 2 cups fresh strawberries
  3. 2 cups soy milk
  4. 4 cups crushed ice

Instructions

  1. Layer tofu, strawberries, and soy milk in a blender; blend. Add ice cubes, 1 cup at a time, while blender is running; blend until smooth.

3.8.16 At 77 calories, it’s hard to complain too much, but I just wished that the strawberries played a bigger role, as it was a bit on the bland side. Maybe a little bit of vanilla or almond extract would help. I used almond soy milk, garnished with some blueberries, and definitely would add more berries the next time. It still was good and creamy, and I love how this one breaks down nutritionally.
