Rosemary-Roasted Chicken with Apples and Potatoes

Apples are in plentiful supply at the start of fall, which means it’s time to start baking! But apples cook beautifully with chicken, even better than pies! With a gorgeously roasted chicken and an apple, potato, and onion bake that makes use of the delectable roasted chicken drippings, this dish makes a terrific sweater-weather meal.

Ingredients

  1. cooking spray
  2. 2 tablespoons butter
  3. 1 large onion, sliced
  4. salt, plus more to taste
  5. 4 teaspoons white sugar
  6. 5 medium apples – peeled, cored, and cut into 1/4-inch slices
  7. 1 pound Yukon Gold potatoes, cut into 1/4-inch slices
  8. 2 tablespoons olive oil
  9. 6 bone-in, skin on chicken thighs
  10. 2 tablespoons chopped fresh rosemary
  11. ground black pepper

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C). Spray the top and bottom parts of a broiler pan with cooking spray.
  2. Melt butter in a skillet over medium heat and add onion slices. Sprinkle onions with 1 teaspoon salt and saute for 2 minutes. Add sugar and continue cooking until onions are translucent but not browned, 6 to 8 minutes. Remove from heat.
  3. Layer apples, potatoes, and sauteed onion slices in the bottom part of the broiler pan. Cover with the part top of the broiler pan.
  4. Drizzle olive oil over chicken thighs. Sprinkle with fresh rosemary, salt, and pepper. Rub olive oil and spices thoroughly all over each thigh and place on the top part of the broiler pan.
  5. Roast in the preheated oven until juices run clear and an instant-read thermometer inserted into the thickest part of the thigh, near the bone, reads 165 degrees F (74 degrees C), about 1 hour. Serve apples, potatoes, and onion alongside chicken thighs.

I don’t use broiler pans and I omitted the sugar. I used a cast iron pan and cooked the onions and removed them from pan, cooked the potatoes and chicken in the pan for several minutes to get the crisping process started, then I flipped the potatoes over and put the onions back in the pan and threw it in the 400 degree F oven for 40-45 minutes. After it was in the oven for 15 minutes, I put the sliced apples on top so they wouldn’t get too mushy. It was DELICIOUS!

Easy to make & quite tasty. I did not sauté onions first; they cooked quite well in the roasting pan. Otherwise I made no changes. We’ll make this again.

I suspected one hour was too long so I cooked for 45 minutes. It had a good flavor, but chicken was too done and potatoes and apples were too mushy. I will try again but will make sure as much fat as possible is removed from the thighs and check chicken temperature after 30-35 minutes.

I made this for my very picky husband. He liked it. I read a lot of reviews before making anything because he’s so unbelievably picky. So the changes. I used brown sugar instead of white. Fileted boneless skinless chicken breasts. And only 2 apples. Plus new baby potatoes instead of youkon gold. Only roasted it for 40 min in the 400 degree oven. And put the chicken directly on top the potatoes onions and apples. Plus I had no fresh rosemary so I used dried spices. It turned out great will be making it again. I served it with broccoli. Recipe was perfect for some fruit in the fridge that needed to be used up. I had half a butternut squash in the fridge that I cut up with older apples. It turned out excellent! One poster talked about the potatoes getting too soft; the squash was a great choice to keep this from happening. Used two thighs and two legs. I broiled the fruits a few minutes before serving just to get a little color. First time I’ve ever had my husband not complain about eating squash. Flavor was really nice because of the fatty drippings. I’ll definitely make it again and may try pork as someone else suggested. On a side note, we made it in our toaster oven and it turned out perfect.

Used a red onion and distributed the slices across the bottom of the pan. Laid the granny smith apple and potato slices in alternate rows on top of the onions. Brushed the olive oil on both sides of the chicken and set the oven to 425 for an hour. Loved it.

we loved it. I chose to do 4 thighs so it would be 2 meals for the 2 of us. Then added a lot of potatoes, 1 large sweet potato, 5 small yukon gold and 6 medium russett. I decreased the EVOO 1/4 cup and kept all the herbs. combo of fresh and dried. plus garlic powder and pressed garlic cloves. The review helps me remember the way we like it.

This is very simple, but very good. Comfort food! I used a cooling rack over my baking dish since I don’t have a broiling pan. It worked beautifully! Crispy, moist chicken, and all those yummy juices dripped into the potatoes & onions & apples. Greasy? maybe a little, but that is exactly what makes it tasty. I sauteed my potatoes with the onions and then mixed them with the apples. Everything was perfectly done in just shy of an hour.

A very delicious recipe, I don’t have a Broiler pan, Soni just put the chicken on the potatoes and the apples and put the Onion on top. It took an hour and 15 minutes in my electric oven.

I don’t have a broiler pan, so I covered the apples and potatoes with vented aluminum foil. My chicken was boneless and skinless, I cooked it in a different dish for a little less time after I cooked the apples and potatoes because I burnt it on my first try, haha. Another change I made, influenced by the pandemic, is I just used a mixed bag of tiny potatoes. I wouldn’t have it any other way, the varied colors were beautiful! I’m sure they offered a different array of nutrients, too. One last change, I used less olive oil. 10/10
