Ingredients

  1. ½ cup sour cream
  2. ½ cup mayonnaise
  3. 2 (15.25 ounce) cans whole kernel corn, drained
  4. 1 (10 ounce) can diced tomatoes with habanero peppers (such as RO*TEL® Hot)
  5. ½ cup thinly sliced green onion, white and green parts
  6. 2 tablespoons chopped fresh cilantro
  7. ½ teaspoon salt
  8. ¼ teaspoon ground black pepper
  9. ⅛ teaspoon ground cumin
  10. 2 cups shredded sharp Cheddar cheese

Instructions

  1. Stir sour cream and mayonnaise until well combined. Set aside.
  2. Combine corn, diced tomatoes, green onions, cilantro, salt, pepper, and cumin in a large bowl. Stir in sour cream mixture. Fold in Cheddar cheese.
  3. For a less spicy version, use Original RO*TEL(R).

A real crowd pleaser! I still get requests to make/bring it to gatherings and for the recipe Serving suggestion: Fritos corn chip scoops and Tostitos Hint of Lime chips – both pair well and change the taste slightly. I personally offer both so that guests can decide which they like best.

Really good, quick recipe that is made with things already in the pantry. I’ve made it using Mexicorn and fire roasted canned corn, and it is all good!! If there’s something that you don’t like in the recipe, you can change it to suit your taste. We also like it with shredded Mexican blend cheese. Very versatile!!

Delicious! I stir fried frozen corn in a hot pan with butter to give the corn a grilled flavor. I didn’t have Cotija cheese so I used a Mexican cheese blend. I also made it with coconut cream and a little lemon juice as a sub for sour cream because my nephew is lactose intolerant. I liked it just as much without the cheese blend. So good!
