Ingredients

  1. 2 (6 ounce) chicken breasts
  2. 2 teaspoons olive oil
  3. 2 teaspoons Italian seasoning
  4. 1 teaspoon garlic salt
  5. 2 ounces fresh mozzarella cheese
  6. ¼ cup sliced pepperoni
  7. 2 tablespoons minced onion
  8. 2 tablespoons pizza sauce

Instructions

  1. Preheat the air fryer to 380 degrees F (190 degrees C).
  2. Cut a shallow slice lengthwise down each chicken breast. Fold chicken breasts in half and cut 2 more shallow slices horizontally. The pocket will resemble an upside down “T”.
  3. Rub each chicken breast with 1 teaspoon oil and season with Italian seasoning and garlic salt.
  4. Stuff each chicken breast with 1/2 of the fresh mozzarella, pepperoni, onion, and pizza sauce. Transfer to the air fryer basket.
  5. Air fry until chicken is no longer pink in the center and the juices run clear, about 18 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

TIPS FOR OVEN BAKE! This recipe was wonderful as an idea. I have the instructions to make it into an oven recipe. I followed what was said and suggested. Put on greased pan, bake at 375 for 40-45 minutes.

Cutting directions not easily understood. I just sliced in half, opened, and filled the middle. Had to cook chicken a lot longer than 18 minutes (more like 35) to reach 165° internal temperature. Otherwise, nice recipe.
