Lemon-Pepper Roasted Broccoli and Cauliflower

Chupe is a typical Peruvian soup made with fish and zapallo. Zapallo is an extremely large squash that resembles a pumpkin, although it is brighter and sweeter than a typical pumpkin. Due to its limited availability, I’ve used a butternut squash as a substitute because it is similar in sweetness and texture. Some recipes call for cream cheese, but I like feta since it perfectly counteracts the sweetness of the squash.

Ingredients

  1. 2 cups broccoli florets
  2. 2 cups cauliflower florets
  3. 1 tablespoon olive oil
  4. 1 ½ teaspoons lemon-pepper seasoning
  5. ¼ teaspoon seasoned salt
  6. ⅛ teaspoon crushed red pepper flakes

Instructions

  1. Combine broccoli, cauliflower, olive oil, lemon-pepper, seasoned salt, and red pepper flakes in a large bowl; stir well. Spread out evenly on a baking sheet.
  2. Preheat the oven to 400 degrees F (200 degrees C).
  3. Roast in the preheated oven for 12 minutes. Stir and roast until tender, about 12 minutes more.

Really easy to prepare and a great accompaniment to any protein. Made with pork chops and my in-laws loved it. I brushed the olive oil on using a silicon brush and also eyeballed seasonings. I tried to be close the the amounts – give or take. Would absolutely make again! Thank you!

I did a tray of each and switched the position of the pans between the 12 minutes. Can’t say if the quantity of the seasonings is correct bc I just sprinkled each of them and used only a tiny pinch of red pepper flakes then tossed. After dumping in the pans I did sprinkle more lemon pepper but not heavy. Yummy
