I created this easy, nutritious slow cooker pork roast recipe since I enjoy sweetness and there weren’t enough ingredients. Due to the fantastic leftovers, the recipe works well for individuals or little families as well. Do not discard the juice! The fluid will keep the meat juicy and flavorful when reheated, so save all of it with the leftovers.

Ingredients
- 1 ½ large sweet potatoes, peeled and cut into 1-inch chunks
- 2 cups baby carrots
- 1 sweet onion, cut into 1-inch chunks
- ¾ cup white grape juice
- ½ cup unsweetened applesauce
- ¼ cup water
- 1 (2 pound) pork roast
Instructions
- Stir sweet potatoes, carrots, and onion together in a slow cooker. Stir white grape juice, applesauce, and water together in a bowl. Pour 1/2 the grape juice mixture over the vegetables in the slow cooker. Place pork roast on top of the vegetables and pour remaining grape juice mixture over pork.
- Cook on Low for 10 hours. Ladle accumulated juices over the roast when serving.

This was such a hit with my household..
My only complaint is that it fell apart. Looked like pulled pork.
I used a boneless roast (since it didn’t specify, I assumed it meant boneless). I also used a mix of white/concord grape juice, but otherwise didn’t alter ingredients at all. I cooked on low for 4 hours, then turned it off and let it sit for another 2 hours before serving. The pork was cooked through and soft, though I don’t think quite soft enough to shred. The sweet potatoes were very, very soft — to the point where they fell apart when you tried to pick them up with the fork. The carrots and onions were just right. Taste-wise, it wasn’t bad — just bland. It desperately needs some other spices to give it some oomph, but sadly, I’m not good at figuring out what seasonings taste good with what ingredients, so I can’t really offer any suggestions. I wouldn’t make this again unless there were some 5 star ratings from people who listed the spices/quantities they used to perk it up.
