Air Fryer Spinach and Mushroom Frittata

Hatch green chile peppers are used to make this slow cooker green chili pork. It tastes fantastic on its own or as a topping for eggs, enchiladas, or burritos.

Ingredients

  1. nonstick cooking spray
  2. 2 large eggs
  3. 1 ½ tablespoons heavy whipping cream
  4. 1 cup coarsely chopped spinach leaves
  5. ½ cup diced mushrooms
  6. ¼ cup shredded sharp Cheddar cheese
  7. salt and freshly ground black pepper to taste

Instructions

  1. Preheat an air fryer to 400 degrees F (200 degrees C). Spray a 4 1/2-inch ramekin with nonstick spray.
  2. Whisk eggs and cream together in a bowl. Stir in spinach, mushrooms, Cheddar cheese, salt, and pepper until well combined. Pour into the prepared ramekin and cover tightly with foil.
  3. Air-fry for 12 minutes. Remove foil and air-fry until top starts to brown and a toothpick inserted into the center comes out clean, 4 to 8 more minutes.

Fantastic! We used coconut cream instead of heavy cream because we didn’t have any on hand. Didn’t notice any change to taste or consistency. The only other change we made was added some fresh garlic. This was delicious and so easy! We are adding it into our breakfast rotation!
