Sweet and Savory Oatmeal

This is a delicious variation on the typical Angel Food cake. It satisfies a yearning for chocolate and has a mild, delicate flavor. Serve the cake the same day it is made for the best flavor and texture, and make sure the egg whites are completely free of yolk residue to allow them to whip to their peak.

Ingredients

  1. 1 ½ cups water
  2. salt to taste
  3. 1 cup uncooked instant or quick cooking oatmeal
  4. ¼ teaspoon ground cinnamon
  5. ½ teaspoon white sugar
  6. 1 tablespoon canola oil
  7. 1/4 (1-pound) package Jimmy Dean Premium Pork Sausage
  8. 1 cup lightly sauteed spinach
  9. 1 large egg
  10. 2 teaspoons maple syrup

Instructions

  1. In a small pot with a lid, bring the water to a boil with a pinch of salt.
  2. Stir in oats and reduce heat to low. Cover and let cook until the desired consistency is reached.
  3. Add cinnamon and sugar, and stir.
  4. In a small frying pan, heat 1 tablespoon of oil over medium-high heat for about 30 seconds. Add Jimmy Dean sausage and cook 8 to 10 minutes until browned, stirring frequently to break up the sausage into small pieces, then drain. Remove the sausage and set aside.
  5. Add the greens to the frying pan and saute for about 1 minute or until they begin to wilt. Remove from heat.
  6. Add the greens and sausage to your bowl of oatmeal, plus an egg cooked to your liking, and maple syrup to your taste. Serve immediately.
  7. Cook’s Note:
  8. Use the leftover Jimmy Dean Sausage to make sausage patties or crumbles to serve with eggs.
