Ingredients
- ½ cup all-purpose flour
- ¼ cup seasoned bread crumbs
- 2 teaspoons garlic salt
- 1 teaspoon freshly ground black pepper
- 4 (6 ounce) skinless, boneless chicken breast halves, pounded thin
- 8 bacon strips
- 1 onion, sliced
- ¼ teaspoon lemon-pepper seasoning
- ¼ teaspoon Italian seasoning
- ¼ teaspoon salt
- ⅛ teaspoon red pepper flakes, or more to taste
- ¼ cup packed brown sugar
- ½ cup shredded Colby-Monterey Jack cheese
Instructions
- Mix flour, bread crumbs, garlic salt, and black pepper together in a bowl. Coat each chicken breast with flour mixture.
- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Remove bacon with a slotted spoon, reserving bacon drippings; drain bacon on paper towels.
- Cook and stir coated chicken breasts in the bacon drippings until chicken is no longer pink in the center and juices run clear, about 5 minutes per side; remove and keep warm.
- Cook and stir onion, lemon-pepper seasoning, Italian seasoning, salt, red pepper flakes, and brown sugar in the same skillet until onion is golden brown, 10 to 15 minutes.
- Set oven rack about 6 inches from the heat source and preheat the oven’s broiler.
- Arrange chicken breasts on a baking sheet; top each breast with 2 bacon slices. Top with caramelized onion and Colby-Monterey Jack cheese.
- Broil chicken breasts until cheese is melted and bubbling, 1 to 3 minutes.

Was looking for something flavorful using chicken breasts and this caught my attention. I’ve made smoothered chicken before and there are many different recipes with different ingredients but this one was by far the most flavorful and was quite easy to prepare. It has many layers of flavor including sweet, hot, salty, and of course, bacon. I thought two slices of bacon was a bit excessive and half of 1 thick slice on each breast was just right, at least for my husband and I. It was quite tasty, and my picky husband loved it. I made up extra breading for the chicken also. It’s the perfect blend of spices and flavor.
This is a very time consuming recipe for one that has “easy” in the name. All turned out except for the sauteed onions with the spices – after 10 minutes of sauteeing on medium and then medium-low heat, the spices clumped together in a black mess and the onions were also mostly black/burned. They may do better if cooked without the seasoning and then adding the spices at the end of that part of the recipe.
My husband said this is 5 star chicken! So easy and very tasty.
This recipe was delicious! I followed the recipe exactly and wouldn’t change a thing. I butterflied my chicken breasts as they were a bit thick and used precooked bacon to save time. The flavor combinations were so tasty and I plan to make this again! Great for entertaining!

I give this dish a 5 because it was great. The lemon and pepper mixed in with brown sugar and rest of the ingredients gave it a unique flavor which both my wife and I enjoyed. we served the chicken with rice as a side dish.
