Use this basil simple syrup to flavor the coolest summertime drinks, including frozen delights, lemonades, and cocktails. To make a sweet herbal syrup, fresh basil leaves are soaked in sugar and water.

Ingredients

  1. 4 tablespoons dry vegan egg replacer (such as VeganEgg®)
  2. ½ cup ice cold water
  3. 1 ¾ cups almond milk
  4. 1 ¾ cups all-purpose flour
  5. ½ cup almond flour
  6. ½ cup vegetable oil
  7. 1 tablespoon baking powder
  8. 1 tablespoon white sugar
  9. 2 teaspoons vanilla extract
  10. nonstick cooking spray

Instructions

  1. Preheat a waffle iron according to manufacturer’s instructions.
  2. Combine egg replacer and water in a blender; blend until smooth and all lumps have disappeared. Add almond milk, all-purpose flour, almond flour, oil, baking powder, sugar, and vanilla extract; blend on low until smooth.
  3. Spray the preheated waffle iron with cooking spray. Pour batter by 1/4-cupfuls onto the iron and cook until waffle is golden brown and the iron stops steaming, about 5 minutes.

I used flax meal as the egg replacer, otherwise followed the recipe as is. It turned out great, and since it made lots, I froze some, they keep well and defrost great in the toaster or oven.
