Shrimp Piccata

Here is a wonderful way to utilize—and even enjoy—the pheasant that the outdoorsmen in your life bring home. Anyone who would turn their nose up at pheasant would be duped by this appetizer’s peppery, crisp, and delectable mouthful! My number one appetizer requested by friends and family has quickly become this. So straightforward and excellent!

Ingredients

  1. 1 (16 ounce) package linguine pasta
  2. ¼ cup olive oil
  3. ¼ cup butter
  4. 1 pound uncooked medium shrimp, peeled and deveined
  5. 10 baby bella mushrooms, sliced
  6. 2 cloves garlic, chopped
  7. 1 (6 ounce) jar marinated artichoke hearts, chopped, with juice
  8. ½ lemon, juiced
  9. 3 tablespoons capers with juice
  10. 1 splash dry white wine (Optional)
  11. salt and ground black pepper to taste

Instructions

  1. Bring a large pot of lightly salted water to a boil. Cook linguine at a boil until tender yet firm to the bite, about 11 minutes; drain.
  2. Heat olive oil and butter in a saucepan over medium heat. Add shrimp, mushrooms, and garlic; cook and stir until fragrant, 1 to 2 minutes. Add artichokes, lemon juice, capers, and white wine. Cook and stir until shrimp is tender and mixture is bubbling, about 10 minutes.
  3. Spoon shrimp piccata over individual beds of pasta. Season with salt and pepper.
  4. Use any pasta you prefer.

Great recipe made twice with differing results. First time, straining the oil from the the artichoke jar was much better than using the oil the second time around and increasing the amount of garlic. Overall, a hit when served with a light green salad and garlic bread.

I really liked this dish! It was easy and delicious. I didn’t have artichokes, so I didn’t use them and did not substitute with anything else. I did use a whole lemon instead of a half, and I added parmesean cheese. It was delicious! I will absolutely do this one again!

Loved this dish! So simple and quick to make. I added a few onions and garlic and left out the artichokes because I didn’t have any. I thickened the juice with a little corn starch to make it a sauce and it tuned out great. Thank you

Loved, loved, loved this recipe! The only change I made was instead of using shrimp, I baked flounder in the oven and the sauce by itself. Then I put a layer of pasta, the fish on top and then the sauce. It was so delicious!

A great quick and basic recipe. I sautéed fresh oregano and basil with the shrimp and increased the amounts of lemon juice and wine and about 1/2 teaspoons on red pepper flakes.

Easy and tasty! Clean up was super easy too! Healthy attempt, so I used whole wheat pasta and no salt in the water. Lots of flavors from the shrimp, capers, artichoke and lemon. I substituted 1/4 cup clam juice and a hefty sprinkle of Parmesan cheese for the butter and wine adding 1/2 a lemon squeezed on the plate. The Parmesan helped thicken up the juice/sauce a bit. This is a new staple in my home!

Loved this extremely easy and quick recipe! I did not have artichoke or lemon so added fresh spinach once sauce was completed. Fresh Parmesan on top and I had a pasta dish better than any restaurant in my area. Even my meat and potatoes husband loved it!
