This is a straightforward and lovely method for preparing a full cauliflower. Even without mashed potatoes or yams, these cauliflower steaks are stunning on their own. For meatless Mondays, this is a fantastic vegetarian substitute!

Ingredients
- 1 head cauliflower, trimmed
- 2 tablespoons extra-virgin olive oil, or more to taste
- ¼ teaspoon garlic powder, or to taste (Optional)
- salt and ground black pepper to taste
Instructions
- Preheat oven to 450 degrees F (230 degrees C). Line a baking sheet with aluminum foil.
- Place the cauliflower onto a cutting board with the stem side facing upwards; cut vertically into 4 steaks approximately even in thickness. Arrange ‘steaks’ onto the prepared baking sheet. Drizzle olive oil over the steaks; season with garlic powder, salt, and black pepper.
- Roast in preheated oven for 20 minutes, turn with a spatula, and continue to roast until soft in the middle and darkening around the edges, about 15 minutes more.

delicious!!! I made mine in an air fryer on the roast setting at 400° for 10ish minutes. it cooked faster than I expected so some ends burnt but still very good!!!
So good!! I used fresh garlic! I could get three steaks out of one head and I use the excess for another meal. If you can flip the steaks without breaking them halfway through… it helps to make them more tender. Everyone in my family really likes this recipe..so I’m happy!!!
I absolutely love making this recipe. I had this at a little Italian restaurant in Chicago and it was fantastic! I changed the recipe up somewhat by coating with olive oil but I used fresh jarred garlic, Italian seasoning, Himalayan salt and pepper. I could eat the whole thing by myself its that good!

i made just as directed and it was great. I did make two heads of cauliflower because 1 only produced 3 steaks at the most. The crumbled florets I used to sautee in a pan with mixed mushrooms, cherry romatoes, onions and peppers with balsamic vinegar and a little bit of crumbled feta. This is a definite “again dish”!

I wasn’t the biggest fan of cauliflower but after making this I think I am now, it was really tasty and very easy to make, I added cayenne pepper and parmesan, everyone in house liked it, will defo make it again

This is a very tasty, quick meal. My husband and I have this all the time. After work, I can make this in about 20-30 minutes. It’s so easy and tastes great. It makes quite a bit. We will have left overs for lunch and/or dinner the next day. We make burritos with sour cream, avocado and salsa. I like to add roasted corn also.
Totally amazing!!! Had guest over for dinner, one of them a famous renown chef Jeff Bishop and he loved it! For that reason I give it a 5 star rating. Everyone ranted and raved about it:) Already made it again!
Very good. Two steaks and the rest on the side. Will try real garlic next time. Left out salt and was great!
