Ingredients
- 1 cup white sugar
- 2 tablespoons cornstarch
- 1 cup boiling water
- 2 ½ quarts fresh strawberries, hulled
- 2 (8 inch) pie shells, baked
- 1 (3 ounce) package strawberry-flavored Jell-O gelatin mix
Instructions
- Whisk sugar and cornstarch together in a saucepan until completely blended. Pour in boiling water and cook over medium heat until mixture thickens, 5 to 10 minutes.
- Remove from the heat and stir in gelatin mix until smooth. Let mixture cool to room temperature, 15 to 30 minutes.
- While the mixture is cooling, place strawberries into baked pie shells with the points facing up.
- Pour cooled gelatin mixture over strawberries and refrigerate until set, about 2 hours.

Takes a while to thicken the sugar sauce, and also have to spend some time blending in the Jell-O to eliminate the gritty texture. A quick and easy desert that’s not that bad. Did use extra thick whipped cream, that made it part of the dish and not just a topping.
So easy, looks amazing. I did only use 1/2 cup sugar, and added 2 drops mint extract. Used Premade Graham Cracker Crust. Decorated with a few blueberries for color. Followed great tip that said boil cornstarch, sugar and water until clear (approx. 5 minutes) BEFORE adding Strawberry gelatin. Definitely a keeper!

Very tasty
This is very easy to make. I slice the strawberries in halves and quarters, depending on sizes. I also mix about 1/4 cup of cream cheese with about 2 teaspoons of sugar and “paint” this on the bottom of the pie crust before pouring in gelatin to keep the crust from getting soggy. We love this pie!
Great recipe…. I use cold water when mixing with the cornstarch sugar mixture.
This recipe was delicious, I made one big pie with this and had to double the jello, mixture. This pie was gone in minutes.

The taste was delicious, however it needed more gel mixture. When we cut it, all the strawberries on top fell off.
Not bad for the first time making a pie. Next time I will reduce the sugar or use a sugar free jello as I personally thought it was overly sweet.
I added 1 cup pureed strawberries when I was thickening on the stove. Haven’t tried it yet. Still cooling.

This is a long time family favorite. I have been making it for 25+ years and it is always perfect. Let me say however, this recipe makes 1 pie, not 2. Also, for those that say that it didn’t set up, when using cornstarch as a thickening agent what ever you are making must boil for a couple of minutes. Just adding boiling water or bringing it to a boil won’t work. Rule of thumb with this recipe is boil until clear, remove from heat and stir in jello.

I made a couple strawberry pies for my ladies Bunco group and they’re were begging me to make it again!! I combined the cornstarch, water, jello and sugar in a saucepan- brought to a boil over med heat, then once it reached a boil, I let it cook for 5 more min, whisking often. Make sure you let the glaze completely cool before pouring over the strawberries. I used a 9″ pie pan and about 4 baskets of fresh strawberries. I made a crust out of shortbread cookies and topped the pie with fresh real whipped cream!! DELCIOUS!
No changes were necessary to this recipe, it comes out exactly as promised and is delicious! From my own errors, use slightly larger pie crusts or smaller pie plates so the crust is uniform, and spray or butter the pie plate before baking the crust into it- this pie sticks like crazy (but was worth every crumb).
Pretty good pie. Easy recipe till you get to the glaze. Mine was too thick by the time it was at room temperature. I had to add some hot water to thin it out, enough to be able to spread it over the berries. I will cut the corn starch amount by half next time. I will also reduce the sugar by half, the jello mix is plenty sweet..
