This recipe is entertaining, delicious, and simple. A surprisingly crunchy tostada foundation is paired with Mexican fajita shrimp. This dish requires careful timing. Before cooking the shrimp, be sure to prepare all of the fixings (lettuce, tomatoes, cilantro, and jalapeno peppers) so that the fajita combination will sizzle when it is served. Put the ingredients, cheese, sour cream, and cheese shreds on a serving platter.

Ingredients

  1. cooking spray
  2. 1 tablespoon vegetable oil
  3. 1 onion, chopped
  4. 1 pound lean ground beef
  5. 1 teaspoon dried basil
  6. 1 cup green beans
  7. 1 cup tomatoes, diced
  8. 1 clove garlic, minced
  9. 2 potatoes, cooked and mashed
  10. ½ cup water
  11. 1 large egg, beaten
  12. ¼ cup shredded Cheddar cheese (Optional)

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 2-quart casserole dish with cooking spray.
  2. Heat oil in a large skillet over medium heat. Cook and stir onion in hot oil until translucent, about 5 minutes. Add ground beef and basil. Cook and stir until beef is crumbly and browned, about 5 minutes. Mix in green beans, tomatoes, and garlic; cook until beans are slightly softened, about 5 minutes more. Transfer to the prepared casserole dish.
  3. Mix together mashed potatoes, water, and beaten egg in a medium bowl until smooth. Spread evenly over beef mixture.
  4. Bake in the preheated oven until potatoes start to brown on top, 15 to 20 minutes. Sprinkle with cheese and continue baking until cheese is melted, about 5 more minutes.

Very disappointed. Absolutely bland. Family said it was very dry. Should have suspected when the ingredients list did not include any salt or pepper. Don’t waste your time on this.

As alot of reviews have mentioned, this is a great base recipe to start with. I went with a couple of ideas from other reviews; I too, added the garlic powder, onion powder, hot pepper flakes, salt & black pepper (w/the basil), to the ground meat and onion mixture. Then the diced tomatoes and a can of (drained), mixed veggies instead of the green beans. I also added the can of cream of mushroom soup… However, I think I will leave the mushroom soup out of it next time as mine came out kind of like a thick stew. You can see it in my photo as the mashed potatoes started to sink, lol. The taste was definately still there though! We really liked it. I will add it to our recipe rotation.

Omitted oil. Fried the onions with the beef. Used a bag of mixed vegetables in place of beans and also added a chopped green pepper. Used 4 large potatoes and added one egg, water, 1 tablespoon butter and a splash of whipping cream when mashing them. This was an easy recipe and made a great casserole. Hubby loved it.

Instead of using green beans I cut up baby carrots and sauteed them in butter and brown sugar and then mixed them in with the hamburger mix. Limit the amount of sugar so not to sweet.

Very good ! I doubled the meat, potatoes and egg . I chose mushrooms, celery and carrots sautéed separately ( adding the carrots for the last minute or two) & layers it on top of the meat . I used the potato water in the potato/egg mashup . Also added Worcestershire and marinara sauce to the meat & onion while frying it up . Delicious and a big hit

This was pretty good. You will note that the recipe does not mention any use of salt or pepper. I added it to the meat mixture as well as to the mashed potatoes. It needed it. It was still sort of bland. Not sure if I’ll make it again. Also, the recipe does not specify that the tomatoes should be seeded. I did do that.

This was completely different than the shepherds pie I am used to but I love to try new things- in this case, that was a mistake. From flavorless filling (which could be fixed if you find a spicing you love) to the bizarre potato topping, that would have totally failed if not for the cheddar cheese, this was not a dish anyone in my family cared for, with 2 people refusing to eat it. There are many recipes for this same thing… you may want to look elsewhere.

Good basic recipe. I spice mine up a little more and add worcestershire sauce to the meat while it cooks adds a bit of tang.

I red the reviews before making this recipe,I added fresh carrots and cooked them with the onion and garlic,I used canned diced tomatoes and used other spices such as ground red pepper (cayenne),Paprika, ground pepper, Italian seasonings, I added canned green beans. For the mashed potatoes I added butter and milk I did use the egg. I put shredded sharp cheddar on top until it melted. I cooked it in my cast iron skillet. It was delicious, and easy to make.

Great easy dish. Used boxed potato flakes to make mashed potatoes. Seasoned ground beef to my liking, while using some of the suggested ingredients. Family enjoyed it, and ate it all!
